Low Carb Diet Recipe: Lisa’s Cordon Blue Chicken

Ingredients

  • 4 chicken breasts (I use skinless and boneless)
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 4 Tbsp. ZeroCarb or Atkin’s Baking Mix
  • 1 beaten egg
  • 1 Tbsp. heavy cream
  • 3 Tbsp. Low Carb bread crumbs (I use spicy pork rinds that I’ve run thru the food processor until they resemble crumbs)

Instructions

Pound the chicken to 1/4-inch thick; salt and pepper chicken…Place 1 piece of ham and 1 slice of cheese on the chicken breast…Roll up and secure with toothpick…Mix the egg and heavy cream…Dip the chicken roll in milk and egg mixture, then roll in bread crumbs…Fry in 4 Tbsp. of oil until brown and done…Enjoy!!4 ServingsApprox. 2 carbs per serving
