Some culinary creativity can make the difference between feeling resentfully "diet-deprived" and making a smooth transition to a lifetime of healthy eating habits.
And while there are some pretty good low-carb convenience foods out there, for many of us, "convenience foods" are what got us in trouble in the first place. So while bars, shakes and pre-packaged meals can serve as fillers and emergency foods, they should never be seen as a substitute for healthy, whole foods. The less processed, the better results you can expect. Low carb recipes make your journey to success smoother, so let's get cooking!
Blueberry Cer-co Muffins
Submitted by Shelleyg on Wed, 05/07/2008 - 20:17.I've hit upon what I think, is a pretty good *old fashion* tasting blueberry muffin. I use a combination of Maggie's dry cereal mix and Coconut flour, (Cer-co) and the texture is actually pretty good as well, IMO. This makes 2 servings.
Stuffed Strawberries...
Submitted by Shelleyg on Tue, 04/15/2008 - 19:04.I bought some of the BEST strawberries at the market a few days ago. I wanted to do them *justice*, and not shortchange them by only adding whipped cream! LOL!
So......I stuffed them! My mom used to do this when I was growing up. She called them *special dessert strawberries*
Easy and quick.
