Blueberry Cer-co Muffins
Submitted by Shelleyg on Wed, 05/07/2008 - 20:17.I've hit upon what I think, is a pretty good *old fashion* tasting blueberry muffin. I use a combination of Maggie's dry cereal mix and Coconut flour, (Cer-co) and the texture is actually pretty good as well, IMO. This makes 2 servings.
Coconut Flour Bread

I was afraid the bread would be dry, because previous experience with coconut flour yielded a very dry product (the OMM, for instance), but this is not the least bit dry, probably due to the large amount of egg and butter. I think that even my dh will like this. It does not taste like coconut.

I suppose this recipe could have easily went under Breakfast sweets, too...They're excellent for when you're on the go, or just as a filling for a sweet tooth...A batch of these makes 1 dozen and they freeze well, too!! Approx. 2.5 carbs per muffin
