Chocolate Flax Cupcakes with Cream Cheese Peanut Butter Frosting

I made these today to take to a family BBQ so I wouldn't be tempted by the "real" cake..and oh my goodness! They were so good!

A cake story...

Low Carb Lemon Cake

Most recipes that I come up with are usually for only 2 servings. This serves a double purpose:

1. If it's really good, and I get carried away, then the *damage* isn't as horrific as scarfing, say,6 servings of cake, muffins or whatever.

2. If it's really bad, and I end up tossing it in the trash, then the loss of my LC ingredients isn't quite as costly.

Anyway, I digress...

Several weeks ago, DH asked if I would bake him a chocolate cake. Since I don't buy, use, or keep the standard boxed cake mixes in the house anymore, I decided to try and make a LC (2 servings) chocolate cake that would lure my DH over to the *dark side* of LC!!

So, after a few tweeks, I came up with 2 different cakes from essentially the same basic batter.

Coconut Flour Pound CakeWow! This is moist and dense and extremely good. A very nice, high fiber, very low carb dessert. Right now I'm thawing some strawberries to top a slice for later today, perhaps with a bit of whipped cream or even sour cream. Can't wait.

My Version of Low Carb Fudge Cake

Delicious and MOIST LC carrot cake! This is easy to make and actually tastes like the real deal, not dry like so many LC cakes/muffins!! This is a variation on the Hazelnut Gateau posted by another member (I have taken liberties and come up with a delicious LC carrot cake!)
