Low Carb Diet Recipe: Bright’s LC Cheesy Biscuit Cracker Thingies

Description

The same recipe can be used to make either drop biscuits or crackers. These are so good with Chili or soup! For my own protection, I only bake 10 of these at a time.

Ingredients

  • 6 oz softened cream cheese
  • 1 3/4 c Shredded Cheddar Cheese
  • 2 Eggs
  • 1 t Salt
  • 1/4 t chili powder
  • 1/2 c almond flour

Instructions

For drop biscuits
Preheat oven to 350 F, spray cookie sheet with non-stick spray.
Be sure the cream cheese is soft enough to easily mix with the cheese and stir until blended. Add eggs, then salt and chili powder. Stir in almond flour until well blended. Drop onto cookie sheet using a tablespoon measure. Bake for 10-15 minutes. These go from nicely browned to burned in about 30 seconds, so keep a close eye on them.

For crackers
Preheat oven to 325 F and spray cookie sheet with non-stick spray.
Mix dough as for biscuits, then chill until dough is stiff enough to form into small 1″ balls (about an hour). Place balls on cookie sheet and flatted to the thickness of about 2 Ritz crackers. These will spread a bit while baking, so leave lots of space between each cracker. Bake for 15-20 minutes. Like the biscuits, they’ll burn quickly if over done. Remove from the oven and cool on the cookie sheet before removing. If you like a crunchier cracker, leave them on paper towels, uncovered for a day or 2 to dry out.

Makes about 30 biscuits or crackers. The entire recipe has approximately 20 net carbs, or less than 1 carb per biscuit/cracker.

Variations
For Red Lobster style biscuits add 1/2 tsp of garlic powder.
Gently press crumbled bacon, parmesan, or sesame seeds on the top of each biscuit before baking.
For a spicier taste, increase the chili powder to 1/2 teaspoon.

Notes

Tip from Febe: Made half the dough for Low Carb Cheesy Biscuit Cracker Thingies into crackers.. I turned the oven off after about 10 minutes let a little of the heat out and left them until oven cooled… There very nice and crispy now!!! There great taste a little like a Cheese It !!

    I made these the other

    I made these the other day…they were wonderful….let them sit on the counter to dry out a little and they had more crunch. shared with the girls in my office and they loved them

    I made these with parmesan cheese instead of cheddar…(we don’t have proper cheddar here in australia…it’s not orange!! :)
