Description
This is a great source of fiber and it’s wheat-free too!
Ingredients
- 1 c Soy Protein Isolate
- 1 c Flax Meal
- 1/4 c Dark Rye Flour
- 1/8 c Splenda
- 1 T Baking Powder
- 1/2 t Salt
- 1 c Cream
- 2 Eggs
- 1 t Vanilla Extract
Instructions
Very lightly grease muffin tins and preheat oven to 350F. Sift dry ingredients together. Mix eggs, cream, and vanilla completely, add to dry ingredients and mix JUST until moistened. Spoon into muffin cups and use the back of a greased spoon to smooth the tops of the muffins (they can be lumpy!). Bake for 15-20 minutes, or until muffins are firm and tops are nicely browned.
