Description
These are great for dessert or just a snack..Top them off with butter and sugar-free honey and you have a treat that is very similar to the ones you get at El Chico’s…Of course with fewer carbs!
Ingredients
- 2 c low carb bake mix
- 2 t Baking Powder
- 1/2 t Salt
- 2 T shortening
- 3/4 c hot water
Instructions
Combine baking mix, baking powder, and salt…Cut in shortening…Add water and stir with a fork until blended…Turn dough onto a lightly floured surface and knead about 10 times…
Place the dough in a plastic bag to rest for about 20 minutes..
After resting, roll the dough to about 1/8 inch thickness…Cut into 3-inch squares…Cut each square in half diagonally to form 2 triangles..
Pour about 3 inches of vegetable oil in a deep pan…Fry a few triangles at a time…
Press down lightly with the back of a fork until the dough starts to puff…Cook until golden brown…Drain on a paper towel and enjoy!
Serve with butter and sugar-free honey or mix 1 pkg. of Splenda with 1 tsp. of cinnamon and roll the sopaipillas in it..Yummy!
