Low Carb Diet Recipe: I Can’t Believe I Can Eat This Cheesecake

Ingredients

  • 2 pkg. cream cheese softened
  • 2 eggs
  • 1/2 cup splenda sweetener
  • 2 tablespoons vanilla
  • juice of 1/2 lemon

Instructions

Preheat oven to 400 degrees. Using an electric mixer combine all ingredients until smooth and creamy. Use a rubber spatula to put it into a pyrex baking dish (I used the pie dish). Smooth to an even surface. Bake about 1/2 hr- 45 min until surface begins to brown. Cool overnight and VOILA! Makes a great snack or dessert especially when you’re craving something sweet!
