Low Carb Diet Recipe: Cornbeef Casserole

Description

Great for breakfast,lunch or dinner!

Ingredients

  • 15 1/2 oz cornbeef
  • 8 oz ragu pizza sauce
  • 3 oz cubed cream cheese
  • 1 c Shredded Cheddar Cheese
  • 4 beaten eggs
  • 1/2 t Oregano
  • 1 ds Pepper

Instructions

Pat cornbeef on the bottom & sides of a 1 1/2 qt casserole dish. Pour pizza sauce in the middle. Add cubed cream cheese and sprinlke with shredded cheddar cheese. Bake for 30 minutes at 350. Combine beaten eggs, oregano and pepper. Pour in casserole and bake again for 20 minutes…….YUM!!!

    One more thing

    I forgot to add that I find it takes 30-45 minutes that second time in the oven.

    Yummy!

    I’ve been making this for years and I really like it. Even my non-low carb husband loves it when I make this dish. (Of course, he wants a slice of garlic toast with his!) It sounded odd the first time I tried it, but it really works. I do put more cheese in mine, use basil instead of oregano (most pizza sauce already has enough oregano) and I put some grated provolone or mozzarella on top.
