Description
Being a confessed chocoholic, I adapted a recipe I recently received to come up with these delicious chocolate mousse frozen treats. We had a surprise birthday party last night after church for our pastor, so I took these to have as an alternative to birthday cake.
Ingredients
- 1 pk jell-o sf chocolate pudding mix
- 1 1⁄2 c heavy cream
- 1 c Water
- 4 pck Splenda
- 1 t vanilla
- 8 oz soft cream cheese
- 1⁄2 c chopped pecans
- 1 chopped carb solutions candy bar
Instructions
Carb Solutions Chocolate Candy Bar - (These delicious bars I found at Kroger have 0 net sugar carbs, but you may substitute with another lowcarb candy bar of your choice, making sure to adjust the carb count if necessary.)
Combine pudding mix, cream, water, Splenda, and vanilla in a mixing bowl and mix until well-blended. Add cream cheese and mix until blended. Stir in pecans and chopped chocolate bar and drop by heaping tablespoonfuls onto wax paper. (You want to make 32 nice-sized cookies so that the carb count comes out right, so add to smaller ones as needed until you use up all the mix.)
Wet your fingers with a little water and press each cookie slightly to flatten into a "cookie" shape, rather than a thick puff as this will make them easier to eat when frozen.
Freeze cookies, then remove from wax paper and keep frozen in a covered container. Enjoy!
