Chocolate Flax Cupcakes with Cream Cheese Peanut Butter Frosting

Description
I made these today to take to a family BBQ so I wouldn't be tempted by the "real" cake..and oh my goodness! They were so good!
Ingredients
- 2 Eggs
- 1⁄2 c Flax Meal
- 2 T cocoa powder
- 1⁄4 c heavy cream
- 1 t Baking Powder
- 1⁄8 t stevia powder
- 4 oz softened cream cheese
- 1⁄8 t vanilla
- 1 ds stevia to taste
- 2 T pb2 powdered peanut butter
Instructions
Mix everything except the frosting ingredients (cream cheese, powdered peanut butter and dash stevia) together until smooth.
- Fill 6 muffin tins (sprayed with nonstick spray)
- This will be enough batter to fill 6 muffin openings almost half full.
- Bake at 350 for 12-15 minutes or so or until they are done.
- Set aside to cool.
Mix all frosting ingredients together until it's the consistency of frosting.
At this point I put each cupcake in a paper cupcake liner before I frosted them.
Frost each cupcake with a portion of the frosting.
