Orange-Celery Seed Dressing

Description
light.. different fruity salad dressing...great with greens...
Ingredients
- 1⁄8 medium onion
- 2 T Lemon Juice
- 6 pk Splenda
- 3⁄4 T dry mustard
- 1⁄2 t Salt
- 1⁄2 c white vinegar
- 1 c Vegetable Oil
- 3⁄4 t celery seeds
- 1⁄4 medium orange
- 20 T pecans
Instructions
pecans... 2 Tbsp. per serving...
mandarin oranges... if desired.
puree onion in a blender with lemon juice. set aside. Combine splenda, dry mustard, salt and vinegar in a double boiler.(or watch it closely on top of burner)
Bring to a boil.. and boil for 1 minute. (with real sugar this got a little thickness to it..unlike splenda) Add this, along with oil, celery seeds, and chopped orange to onion mixture, and blend at medium speed for 10 minutes..
Store in refrig. Serve at room temp.
Serve this over a mixture of greens.. including spinach.. top with the pecans.. and if desired .. the mandarin orange slices..this is a delicious dressing served with the spinach as one of the greens and the orange slices and pecans..
Notes
with the mandarin oranges.. the carbs are..5.8..(I think..)
without the above the carbs are 2.8.. (I think..)
