Description
This is absolutely delicious with cheesy green beans and a side salad.
Ingredients
- 2 Eggs
- 1⁄2 c Taco Sauce
- 2 Minced Jalapeno Peppers
- 1⁄3 c Spicy Pork Rinds
- 1 t Salt
- 1⁄4 c Chopped Onion
- 1 1⁄2 lb Ground Beef
- 1⁄3 c Shredded Montery Jack Cheese
Instructions
Combine first 6 ingredients in a large bowl; stir until blended. Add ground beef, and mix well. Shape into a 9x5 inch loaf. Spread 1/4 cup taco sauce on top of loaf.
Bake, uncovered, at 325 degrees for 1 hour. Sprinkle cheese on top of meat loaf; bake an additional 5 minutes or until cheese melts.
