Description
This is one of those recipes that is hard to determine a true carb count per serving because there are so many variables. But, it's definitely LC, definitely easy and definitely good! A great "casserole" meal.
Ingredients
- 1 lb Ground Beef
- 1⁄2 pk Taco Seasoning
- 8 Yellow Squash
- 1 c Grated Cheddar Cheese
Instructions
Cut squash in half lengthwise. Hollow out center by removing seeds. Salt and pepper halves. Place in a greased casserole dish with cut side up.
Brown beef with dry taco seasoning. Drain beef then spoon into squash shells.
Bake 25 minutes at 350. Top with cheese and bake app. 10 more minutes.
