Description
Here's a nice Finnish recipe for Lamb that I saw in the newspaper this week and modified by substituting Splenda for sugar. Enjoy!
Ingredients
- 6 lb leg of lamb
- 2 t thyme
- 3 t basil
- 1 t sage
- 1 t rosemary
- 1 t Black Pepper
- 2 t Salt
- 12 clv Garlic
- 3 c heavy cream
- 3⁄4 c strong coffee
- 1 1⁄2 T Splenda
- 3⁄4 c broth
- 1 ds oil
Instructions
Create a double-layered, boat shaped vessel out of tinfoil that can accommodate the leg of lamb and place it in the roasting pan. With a sharp knife, make deep slits in the lamb and insert the garlic. Smear leg with oil. Sprinkle with the mixed herbs.
Bake at 450 degrees F for 10 minutes. Reduce heat to 375 F and baste with sweetened coffee and cream.
After 10 minutes pour the broth over the roast. Baste regularly with the juices. After an hour reduce heat to 350 F and continue to baste.
Should the juices run dry, add a bit of water. The leg should be well done in three hours, if not in two and a half. The more diligent you are about basting, the tastier the end result...

Total carb count is somewhere between approx 20 grams by my count (Cream, Splenda and spices) Serving count will depend on whether you go with (6) 1 lb servings or (12) .5 lb servings. Either way, it's not much...
