Bee's Crock Pot Enchilada

Description
Nice low carb enchilada recipe that my entire family enjoys. I like cooking it in the crock pot so I can get it ready and forget it!
Ingredients
- 7 la tortilla factory tortillas
- 2 cn eden black soy beans
- 1 lb diced cooked chicken
- 7 sli pepperjack cheese
- 14 T Salsa
- 1⁄2 c chopped green onion
- 2 diced jalepeno peppers
Instructions
Can use other "hot" pepper in place of jalepeno.
Make three long aluminum foil strips and place in crock pot like the spokes of a wheel. This will allow you to remove the dish from the crock pot when finished.
Layer the above ingredients as follows: 1 tortilla, 2 Tbsp salsa, 1/4 cup beans, 2-3 ounces of chicken, a sprinkle of green onion, a sprinkle of peppers, and one slice of cheese. Repeat until all ingredients are used.
Cook on low for 8-10 hours.
Notes
I figured the carb count for the entire recipe at 45 grams (not including fiber). This will depend on the salsa, tortillas (if not La Tortilla), and cheese used. You can serve with a little bit of sour cream. Don't forget to add those carbs. Easily 8 servings.
