Sausage Cheese Balls

Description
Adaptation of an old Bisquick favorite - super quick and easy. I prefer them hot, but they can also be eaten cold and still taste good.
Ingredients
- 1 lb mild sausage
- 2 c lc bake mix
- 1 1⁄2 t crushed red pepper
- 8 oz Shredded Cheese
- 4 oz Cream Cheese
Instructions
Preheat oven to 350. If your sausage is frozen, thaw it. Do not cook the sausage.
In a large bowl, combine LC bake mix, shredded cheese of your choice (I used finely shredded Mexican blend), and crushed red pepper (adjust to taste - 1 1/2 t. will give you a pretty spicy finished product - and you'll probably want to skip if you're using spicy sausage).
"Cut" the cream cheese into the mixture and distribute it throughout your mix, much like you do when making pastry crust. (You remember that, right? :))
Mix the thawed sausage into the bowl. Roll the mix into ping-pong sized balls and place fairly close on an ungreased cookie sheet. They rise slightly in cooking, but not a lot.
Bake for 20 minutes, or until golden brown.
Notes
Please note these are NOT low calorie, and I wouldn't suggest things made with LC bakemix for the induction phase of a LC eating plan. The nutritional info is PER each Sausage Ball, so please calculate accordingly.
