Description
Delicious, different, low-fat, no carb!!!
Ingredients
- 4 quail breasts
- 4 bacon strips
- 2 T Butter
- 1 T Dijon Mustard
- 1 pn chopped parsley
- 1 ds Black Pepper
Instructions
Preheat broiler
Begin by washing the birds thoroughly and letting them dry on a broiler pan.
Mix melted butter, dijon mustard, parsley and peppercon and warm the mixture for 15 seconds in microwave. Brush all sides of the birds with mixture. Wrap 1 peice of uncooked bacon around each bird, and insert a toothpick into the ends to hold in place.
Put broiler pan with quail in the broiler for 5-10 minutes, checking them once or twice for browning. Remove pan, turn birds, brush with butter mixture again, and return to broiler for another 5-10 minutes.
Quail will be done when the breast is pierced with a fork and the juices run clear, and both sides of birds are golden brown. Allow birds to cool for 2 minutes or so, remove toothpick and bacon strip from birds and enjoy!
Notes
Many grocery stores carry farm raised quail that are dressed and ready to cook. This is a good way to have it!
