Description

Breading for fried fish and meat.

Ingredients

  • 1 pk pork rinds
  • 2 Eggs
  • 1⁄4 c Parmesan Cheese

Awesome way to enjoy the texture and taste of breaded fried fish (also can be utilized on cube steak and fried in skillet to simulate chicken fried steak,this is a bit more touch and go requiring just the right amount of heat to the oil in a non-stick pan)

This is a variation of the fried pork rind breading.

For fish preheat oven to 500 degrees
Basically all you need to do is get some pork rinds and turn them into a fine powder.
The best way to powderise the pork rinds is in a coffee grinder.

Next grate some Parmesan cheese and mix with the pork rind powder and if you'd like add salt and pepper or other seasonings.

pour a high temp cooking oil in a baking dish

beat a few eggs in a dish that you will be able to thoroughly coat your desired meat product with the beaten eggs

let excess egg drip from meat and then dredge in pork rind parmesan mixture

place in oiled dish ( excess breading cheese mixture can be placed atop the fish)and into preheated 500 degree oven ( for a piece of halibut approx. 3/4 to an inch thick and weighing about 12 ounces 10 minutes has been perfect for me as I like my fish juicy and not dried out)

Notes

Very low in carbs.
eggs = .6 each; parmesan cheese = 1 gram per quarter cup
