Description
The original recipe called for angostora bitters; but I didn”t have any, so recalled having salmon in parchment with capers, so I used capers. Very delicate and rich flavored dish. Serve with veggies & salad and you”ll have a nourishing and satisfying meal.
Ingredients
16 oz canned salmon
2 T Lemon Juice
1 ds Pepper
1 ds thinnly sliced sweet onion
2 T capers
1 c Sour Cream
1 ds Salt
Instructions
Drain salmon, reserving liquid in small mixing bowl. Gently emove “spine,” keeping salmon as intact as possible, but divided into two pieces. Place salmon in shallow baking dish, cover with lemon juice, pepper.and onion slices.
In salmon “water” add sour cream and salt, mix well, and spoon all over the salmon, onions and capers in dish.
Bake at 325 for approx. 40-45 minutes.
