Description
Eat as an appetizer with pork rinds or place on top of a bed of lettuce
Ingredients
- 1 diced tomato
- 1⁄2 Diced Onion
- 1⁄2 c cilantro
- 2 T fresh lemon juice
- 12 medium shrimp
- 1⁄4 avacodo
- 1⁄2 jalapeno pepper, sliced
Instructions
For the medium shrimp (I use the frozen kind) chopped, avacado is for the garnish, jalapeno pepper (optional).
Combine all the ingredients. Garnish with slices of avacado.

Appx 12 carbs total, feeds 2-3.
