Description
Delicious and simple seafood dish the whole family will love...Best yet, it's low carb!
Ingredients
- 1 c Crushed Pork Rinds
- 1⁄2 c Grated Parmesan Cheese
- 1⁄2 c Mayonaise
- 2 t tony's creole seasoning
- 2 lb catfish fillets
Instructions
Use spicy porked rinds; mix pork rinds and cheese in a large bowl...Mix mayonnaise and seasoning in a separate bowl...
Brush the fish with the mayonnaise mixture. (Really, it is good...) Coat with the pork rind mixture...Place in a 15x10 baking pan and bake at 375 degrees for 25 to 30 minutes..Enjoy!!
!With the ingredients, I know it doesn't sound good. Just try it and you won't believe it, though!
Notes
*You can also use sole, halibut, cod, and orange roughy in place of the catfish
**For an extra zing, drizzle with a little lemon juice before you eat it
