Description

A tasty, LC Clam Chowder made with the diced stem of a cauliflower to simulate potato chunks.

Ingredients

  • 1 bn Cauliflower
  • 2 c beef stock
  • 10 oz clams
  • 1 ds Salt
  • 1 T minced onion
  • 1 T Butter
  • 2 c heavy cream
  • 1 ds minced parsley

Instructions

Dice cauliflower core, simmer 10 min our until cooked like a potato. Heat the cream and stock together. Add all ingredients and heat through. Makes 4 - 5 servings.
