Low Carb Diet Recipe: Garlic Cauliflower & Tomatoes

Description

Being Italian I adapted this recipe from a pasta dish I used to make all the time. Even non low carbers LOVED it- it is aw some!

Ingredients

* 1 head chopped, cooked cauliflower
* 2 c diced roma or cherry tomatoes
* 2 T Olive Oil
* 6 clv crushed garlic
* 1 c Grated Parmesan Cheese
* 1 t basil

Instructions

The key to this dish is timing – have all your ingredients measured and ready BEFORE you turn the heat on

in large skillet on med/high heat oil add garlic let cook for 1 min then add tomatoes stir cook until tomatoes are tender and they just start to create a sauce like substance lower heat add cheese and basil

stir and simmer for a min stir in cauliflower
