Description
Needing something quick and delicious to serve for dinner guests? This pie serves 6 to 8 and best of all...it's low carb and scrumptious!!
Ingredients
- 10 oz frozen broccoli
- 2 c Shredded Cheddar Cheese
- 2 c cooked, cut-up chicken
- 2⁄3 c Chopped Onion
- 1 c heavy cream
- 3⁄4 c low carb bake mix
- 3⁄4 t Salt
- 1⁄4 t Pepper
- 3 Eggs
Instructions
Preheat your oven to 400 degrees.
.Grease a pie plate..Rinse your broccoli under cold water to thaw..Drain completely.
Mix broccoli, 1 cup of cheese, the chicken, and onion in plate...
Beat milk, eggs, baking mix, salt, and pepper until smooth, usually takes 1 minute...Pour this into the plate...
Bake for about 25 to 30 minutes...When a knife inserted in the middle comes out clean, the pie is ready...
Top with remaining 1 cup of cheese...Bake 2 minutes longer...Cool for about 5 minutes before serving..
Notes
*This is also delicious as a broccoli pie...Just omit the chicken and add 2 packages of frozen chopped broccoli... (scallions or dehydrated onions also work well) - 6 to 8 servings

Thanks for pointing out that I'd missed the eggs when I transferred this over. For most recipes you can use egg substitue without significant changes, but I haven't tried this one personally to be able to tell you. If you try it, you'll have to let us know how it goes! :)
