| Amen, Mr. President! There are many, many more green veggies in the world that need our attention! I would like to start the list off with one of my favorites, and often misunderstood green veggie: OKRA! Ahhhhh, sliced and pan sauteed' ala naturale...it's a thing of beauty! VVP Shelley

| Welcome to the club Shelley. As I have said somewhere before, there are far too many other wonderful tasting vegetable around to waste my time trying to find a way that makes BS fit for my consumption. My personal favorite is broccoli rabe, which by the way is actually far more nutritious than any BS and way lower in carbs.

| I am here, my leader!! This thread is fabulous! And that article...all I can say is, Valerie is a genius. I could not have said it better myself. Ah, broccoli rabe. Sauted with olive oil, garlic, and a sprinkle of toasted pine nuts, it is food fit for the gods. Libby, you are so right. And Shelley, I have to say, growing up in Michigan, we didn't see a lot of okra. When I moved to Texas, I got to know fried okra...yum. Gumbo wouldn't be gumbo without it. Maggie, it's not slimy when it's fried or in soup. Honest. It's really good, My favorite veggie has to be broccoli. I eat it about three times a week for dinner, and often raw for snacks. I just love that stuff. Cauliflower, too. I think fauxtatos are one of the best things about low carbing...made with cream and some grated romano cheese...yummy.
