Default New to the whole process

Hey all... just stumbled apon these forums and from what I am reading it is an incredible bunch of people and a great support forum. My problem has been I've always been overweight all my life.. some points I was a lot less than others ( due to sports etc ) but I'm at the point in my life @ 25 years old that I finally want to control this and get back to feeling good.

My profession is both good, and bad considering. I am a chef.. and while I am able to make anything that I want and follow a low carb diet to the T is very easy for me due to the resources I have and just being able to make everything at work and take the time I need... on the other hand.. we have the negative which is being around a ton of sugars and carbs...

I've really just started atkins and I do like the whole process it is easy and your meals are still great. My problem is.. I can get through the day no problem at all.. it just seems to be around 8-9 pm that cravings for something sweet hit me... is there anything that i can do to help control these cravings to start.. I mean it's pretty rough when I'm at work surrounded by sugar and it hits me.

Powerbait - welcome! I'm posting a link to the Dessert section of Lowcarbeating. You'll find a lot of possibilities for something sweet like cheesecakes. make them in muffin tins and freeze some at home and at work.

Desserts

If you're good at portion control you can make nuts with a sweet glaze. personally i would eat as much as i made. Here's an example in this LINK

Being a chef I'm sure you can tweak any of these recipes to your satisfaction and use them as a springboard for many other recipes.

You might want to check out some cookbooks, too, for ideas. I love George Stella's recipes in particular, and as a Chef, you would probably find his story especially interesting, too. Very inspirational!

It's funny sometimes that when we crave sweets, we think some veggies and ranch is gonna take care of it. When I'm craving sweets, I try to make some LC ones. Much easier than to fight the tide, and leaves me feeling satisfied.

Congrats on taking the reins now, when you're young. Makes it easier. Good luck to you!

Hi, Chef! When I need a sweet fix, I make the One Minute Muffin, in the Low Carb Cooking section. I make it with cocoa, and sometimes use peanut butter for the fat. If I really need more sweet, I top it with a drizzle of Walden Farms chocolate syrup. That usually takes care of the craving.

An easy fix for a sweet craving is a can of one of the fruit flavored Diet-Rite sodas. 0 carbs, and 0 calories. I like the tangerine and black cherry flavors best.

Just offering my own welcome. Hey, maybe you can point us to some good recipes or techniques - we like to read about new ideas in the LC Cooking forum!

I also think you'd enjoy the Stella family story - how two chefs lost hundreds of lbs together and forged a whole new career (books, TV, catering on cruise ships).
