Default Need Breakfast help for Husband

Myhusband wants to start the Atkins program, but he's worried about breakfast. He eats his breakfast in the car on the way to work . He doesn't have time to cook anything. This is the only thing keeping him from starting the program. Does anyone have any suggestions for him? Thanks for the help!

string cheese
hard boiled eggs
deli meat (maybe rolled up w/cream cheese or other cheese inside)
celery sticks w/cream cheese
pepperoni (I like it nuked for about 2 minutes... becomes pepperoni chips... nice and crunchy)

Just a few ideas. That's all I can think of for now. I'm sure others will chime in.

When I'm on the run and in need of eating in the car I make 2 sausage patties and an egg....sort of like a biscuit and egg sand. with the sausage acting as the biscuit. Wrapped with a paper towel so there's no mess too!......My water and sausage/egg sandwich are great travelers.

I hope you get many suggestions, it takes a little thought but there's choices out there for everyone.

I eat breakfast and lunch most of the time in my work van! I drive thru Jack in the Box and get a supreme sausage sandwich without the bun, of course. They serve it in a little tray with a top on it. I cut (with the knife provided) it into 3 peices, stab them (with the fork provided) and eat them off the fork. LOL How funny that must look!

When I'm feeling really industrious, I will make sausage and egg taquitos, using the l/c tortillas. As long as you hold it right, no problem. Skip the salsa, though...I wore some on my shirt all day last week!

Maybe he could have a protein shake until break and have some breakfast then...

My standard weekday breakfast is 2 sausage links. I cook them for the entire week on Sunday and then microwave two each day, wrap them in a napkin and off I go. Might not sound like enough food, but it lasts me all the way to lunch.

What about making some of the muffins off the LC Cooking page? Have that and a boiled egg enroute to work?

These are SO good, and can be made ahead of time. My non-LC co-workers gobbled them up, too.

I just posted a recipe for "Bacon Cheeseburger Quiche" in the recipe section. Not sure if it would be there yet. It is our "on the go" breakfast.

This, and many other quiche type dishes, can be made in muffin tins, or even in a square baking dish so that you can cut hand-sized portions. Zap them im the microwave, hold em in a paer towel, and munch away while commuting.

How about egg salad, wrap in lettuce leaves while on induction, after on LC bread, and after induction, breakfast tacos with lc tortillas -
scramble some eggs with cheese, and cooked breakfast sausage, put on lc tortilla and some salsa, wrap in a piece of foil, whala....
had one for breakfast today...

LOL! Can ya'll tell Carolyn and I are both from Texas? Does anyone else eat salsa on eggs & sausage b'fast tacos (taquitos)? I had to leave off the salsa (see my previous post) but they sure are good. Most of our Whataburgers in Texas are open 24/7 and you can get those little breakfast taquitos anytime...just bring your own tortillas so you can switch!

my fav breakfest since I always loved my eggs over Medium.. and would eat it w/ toast i had to find something to dip my yellow w/.... so monday we had steaks for dinnner.. i had 3 left over... so today i took one and sliced it realy thin fried up my eggs just when the eggs were done i scooted them off the plate and tossed the steak in.. YUMMIE... just long enough to get hot.. and back outworked great for dippin in the yellows.. not realy an on the way to work breakfest... Keishes are great for that..

the steak an eggs could be a weeknd treat or something... or you could scramble the egg and wrap the steak in it... and out he goes... it may take some planing but if he is worried about his weight soon enough he will take the extra time to plan ahead

I sometimes wrap up some deli turkey, sour cream, and cheese in lettuce that or a small amount of dinner left overs.
