Yesterday, no veggies except a big salad when we ate out. I made some apple crisp last night (the apples were gonna go bad) and had a little of that.

Today, it was about the same. I made myself a salad with cut up chicken and bacon, and topped it with shredded cheddar and Ranch dressing. MMMMMMmmm, who need a tortilla to have a "wrap"? And I had some more apple crisp. Not my best effort. I usually do better during the week.

Where's Dragonmom?

Yesterday all I had to eat was a big salad as well, but at home. Not great but three servings is better than none.

Today I have started off well by having a baby spinach salad when we went out for lunch. We'll also be going out for supper so that means another big salad. But where we are going for supper they are a lot bigger than the two cup spinach salad at teh upscale place we went to lunch at.

3C salad veggies and 1 C cauliflower...will have a pear later too! I LOVE pears! That makes 6 for me today...after a weak weekend...not too bad really!

Oh-oh! I missed last night! We had our meeting at Starbucks and I was running late here. But, I keep a food diary, so here it is: celery for snack (morning and afternoon), salad last night. Not great, but okay.

Today:same except there was some lettuce on the bunless burgers I had at lunch.

I'm gonna prep some cauli tonight for snacks tomorrow. I'm going to be on the lookout for a good quiche recipe. I need something quick for mornings and I'm looking for another place to add veggies into my menu!

Another big salad today for lunch, brought my own to work. Probably 2 - 2 1/2 cups lettuce, then had some zucchini when I got home, then ate a half a head of cauliflower I had made into mased fauxtatoes.

I forgot my cauli this morning! The only veggies I had all day was the spinach and artichokes in the dip I had for dinner! Yikes! I gotta get with it!

I forgot I had half an apple yesterday, too. So, not so bad.

Today I remembered my cauli, so I stopped and got a good, basic Ranch dip to eat with it. I had some for lunch.....and a can of asparagus at dinner. I may try to make a spinach quiche this weekend. Gotta try to incorporate some veggies into breakfast. Some salsa on my eggs really isn't cutting it!

I like spinach in my feta cheese omlettes.



Yesterday, had the other half of head of cauliflower mashed. Then ate almost an entire 16 oz. bag of brussel sprouts, I didn't eat 5 which is a serving so according to the bag I ate 4 servings. Then I also had another big salad, 3 cups lettuce with about 5 grape tomatoes, that was lunch, the rest was supper.

Oh, and the day before (Wednesday) I forgot to post the one cup of grape tomatoes I had split between an omlette and on my salad.

Did OK with two sevings at lunch, one broccoli and one cauliflower. Then I had a big salad for supper, three servings there.

Tomorrow I need to start getting in some fruit-berries.

yesterday was not so good...call it a speed bump or whatever...had a bad day...I hate parent teacher conference days...I almost never see anyone...saw one parent all day...played in the gym but didn't eat so good on the veggie front...had some black beans and a few kidney beans in chili and a pear. Oh and lettuce and tomato with my hamburger at lunch. hmmmmm, wonder if that is part of my mood...not likely actually!

Missed my check-in yesterday......I got pukey-sick last night and went to bed early. I had some cauli and dip at lunch, and shared a can of green beans with the dog last night (before I got sick). Not my best day, by far.

I'm better today, planning on a trip to the grocery store....I'm all out of fresh veggies. I've only had eggs and cheese so far today, so I've got alot of making up to do!

Not as good today, only four servings. Hopefully tomorrow will be better...If I can get out of my driveway! In the middle of an ice storm, the power has gone out once already.

1C green beans, 2C veggie soup (beans, carrots, peas, corn, cauliflower, broccoli, beef broth and barley (I know, I know...but I lvoe barley in veggie soup)), 1 pear...I think I did OK for one of my bad days.
