big bowl veggie (celery, broccoli, cauliflower) soup for lunch and half bag brussel sprouts for supper. figure I got in my five servings, two for lunch and three for supper. I love me some brussel sprouts.

I had the rest of the peaches today (from the can of CarbClever peaches) at lunch. For dinner tonight, I had a salad.

I'm gonna have to make a spinach quiche thing and bring it to work (with a couple of slices of bacon on the side!) to heat up and have for breakfast. I need the veggies, and eating breakfast out every morning is getting expensive.
I used to make breakfast tacos with the l/c whole wheat tortillas, then I found out that I'm sensitive to wheat, so I quit eating them.
Maybe I'll get my 5 in tomorrow.

I had a small apple for snack, then I ate an entire can of green beans for lunch. That's 3 1/2 servings right there. Tonight I had boiled shrimp for dinner. Yum! With a green salad on the side. I finally did it! I got more than my 5 in today!

Tomorrow I'm going to see if we have the carb clever fruit at my store. I am doing induction now so I will save it but that with some cottage cheese sounds good. I miss peaches!

I had a half cup of raw tomatoes in an omlette this morning, a cup of cooked broccoli for lunch and a serving of brussel sprouts for supper.

So not five. I'll do better tomorrow.

So far I've had some (about 2/3 cup) spinach with eggs and cheese. I am going to try the Cauli mash.....I do so envy Dh when I make him potato salad! I've gotta go to the store sometime today, so I'll grab another bag of salad and some more radishes while I'm there. I have some celery.....but the celery Kroger has had lately is SAD. Not near as nice as in the fall....maybe there's a celery season? If there is, this ain't it!

After I looked up carb counts for radishes, I ate the whole bunch! Add some water and 2 of my "fudge/fiber cookies" and that was it for lunch. Tonight I had some salad alongside the salmon I had for dinner. MMMMMmmm.

2/3 cup canned spinach
10 radishes
2 cups lettuce salad equals ? servings....I need to look back over the "what is a serving of veggies" list!

Salad veggies are 1 cup per serving.

I forgot to look for the peaches. Darn. I'll look when we got back tomorrow to get diapers at Kings. Don't feel like going out to Costco.

Anyhow missed by a half serving today. Had a serving and a half of brussel sprouts and three servings chopped broccoli. Bought more lettuce this morning but didn't get it washed...lazy!

I FINALLY made the "mock potatoes" with cauliflower today!

For lunch, I steamed them, broccoli-style, since someone said boiling it like potatoes would make it to watery. I added the same stuff I add to potato salad: mayo, mustard, onion, pickles, and boiled eggs.
Then, I challenged DH to try it. He said it was "okay", taking his third bite. Then, he got up and got a bowl full. Tonight for dinner he had some more. I had to rescue myself a little "take-with" bowl for tomorrow's lunch! Then, I had the rest with my shrimp for dinner.
If I could just get him on lowcarb completely, we could quit buying that expensive Nexium he has to take for reflux!

Oh yeah, I'm supposed to be checking in here! I had a cup of the cauli salad at lunch and another at dinner. I usually count beans as veggies, but I guess they are actually protein......but I had some in the chili we had at lunch. Not a bad day.

Love the fauxtatoes.

I had two servings of sauteed zucchini for lunch and three cups salad with tomatoes for supper. So just got in my five for the day.
