Here is where we come to check in and be accountable for getting those 5-a-day in of our veggies and fruits.

It may help you to be accountable for getting the veggies and fruits we all need. Even if you don't it's nice to have a place to talk about it!

It's so nice to see more and more people posting here. Let's show the naysayers what low carb and fruits and veggies is all about!

Yesterday I got in spinach at lunch (cooked) and a big salad for supper. I am trying to get most of my servings from salad stuff now (lettuce, tomatoes, cucumbers, etc) with one cooked veggie. With spring coming I hope to see strawberries on the market soon. I would like to get some fresh fruit in once in a while and not just frozen. Though fruit really hasn't been high on my list lately, I would like to get it back on again.

Today I had mashed fauxtatos with lunch, string beans & Fried Rice with dinner, and strawberries for desert. Hmmm, only 4 servings...gotta do better!

Hang in there Noel...spring is coming. (At least that's what I keep telling myself as I sit at the computer with a heater at my feet! ) That spring and summer produce will be coming in, and we'll be loving it!

Today was salad day. I had two cups of lettuce for lunch and tehn supper I had a cobb salad with tomatoes and about three cups of lettuce. Went to the grocery store and stocked up on the frozen veggies and lettuce and two pounds grape tomatoes. Should be good for the next week.

Remind me how we count the veggies to ensure we are getting 5-a-day. Are they 1/2 cup servings?

So far, I ate about 3/4c spinach, 3/4c lettuce and probably another 3/4 cup of tomatoes, bell pepper, pepperocini, olives, pickles and onion. (It was a yummy Subway chickena and baby spinach salad.)

I haven't had dinner yet. I plan to have a small taco salad because I'm not that hungry after drinking an Atkins shake when I got home.

Maxibee...to answer your January question an avocado is a fruit. It's all in the seed and with a pit it's a fruit. Avocados are 10 for $10 ($1 a piece ) at King Soopers but they are all hard. I think I'll go back and buy some and put them in a paper bag like bananas (which were all green - I get them for the baby).

Melissa, it really depends on the item. Lettuce is 1 cup while my frozen veggies are 2/3 cup. Brussel sprouts are listed as 5 of tehm for a serving. Some where in the past threads there's a link to the government definitios...I'll try and find it.

Well, I guess I've been getting more than I thought, 1/2 cup is a serving of cooked veggies. My kroger veggies bag is wrong!

If salad greens are 1 serving per 1 cup, then I probably got in only 3 to 3.5 cups of veggies today...depending on how a cup of lettuce is measured. (loose? or packed? I figure it means sort of packed, but not squished)

Monday:1/3 can CarbClever peaches.....not so good!

Tuesday:veggies and dip (lots) for snack (I was HUNGRY!) Probably 3 servings.

Today:a small apple, a medium salad.

I've REALLY got to try to focus again here. The last couple of days have been CRAZY!
