You're very good to do that hdyhouse. DH is just getting around now to preparing (all on his own - without prompting, pleading, screaming, raging from me!) lunch sometimes. Well - he makes a bowl of hummous anyway! And he's graduated to chopping the pumpkin for me! AND will barbeque if we have meat. But he ALWAYS does the dishes - so mustn't complain. Strawberries are excellent here right now and grown locally. I looked at my shopping trolley this week and it was loaded with veggies, a pleasure to look at! I try to get as much variety as possible and I've become very keen on barbequed eggplant - those luscious big purple ones, they take on a beaut smoked flavour. Pretty keen on the fresh shitake mushrooms too. The oyster ones are good with tofu or chicken and I buy the big dark brown fields to fill with chopped tomatoes. Enokis are good sustitutes for noodles as well. Very versatile critters are mushies!

Breakfast was Maggie's cereal w/blueberries. Lunch was a serving of lettuce leaves wrapped around a cheeseburger. Dinner was grilled pork, a couple of servings of curried cauli-rice w/mushrooms, and green beans w/tomato and onion.

I had that spinach omelet....with swiss cheese for a change: yummy! Then at lunch I ate the rest of the spinach w/ some chopped artichoke heart and more swiss cheese. (I cannot each spinach by itself.)

Dinner was a nice grilled chicken Caesar from Burger King. (We went to see Fantastic Four and DD wanted to go to BK to get a meal/toy from the movie....then they stiffed her with a stupid Shark Tales toy!)

I know I had my 5 today! All veggies, too. (And got a Julian McMahon fix! He's great as Dr.Doom!)

Breakfast was sausage and l/c pancakes W/blueberries & whipped cream. Lunch was a ground beef enchilida. Dinner was a grilled steak, sauteed mushrooms, egg plant parmesean, and a lettuce salad w/ grape tomatoes, green onion, and stuffed olives.

I like spinach as raw salad greens. Today for lunch I had celery, cucumber, red pepper and carrot sticks (just a couple of each) and a leaf mix of shredded red cabbage, spinach, basil, parsely, coriander, shallots with red and yellow cherry tomatoes, onion sprouts, and hard boiled egg chopped and 1 tspn of lowfat soy mayonaisse (but took care to buy the healthy one that's not too processed) squeezed lemon on top with pepper.

The fruit (NOT the veggies) looked so good at the supermarket today, I think I went a little overboard with the buying and ALOT overboard with the eating!

Along with the obligatory salad and celery, I bought a huge Black Diamond watermelon that was so ripe and sweet! And some cherries, huge, like tiny plums...some strawberries, oranges and grapefruit DH requested, and finally, some nectarines that are not quite ripe yet. Thank God! I need them to "wait" for a few days while we munch on this watermelon!

OH! We got a watermelon as well - its so juicy! Today had fajita (included green pepper, lettuce, and tomato), strawberries, blueberries, and a salad at dinner.

BF - had some eggplant cooked Chinese style - it was really good. Been thinking about buying some to try at home - maybe try your bbq'd way...

Breakfast was Maggie's cereal w/blueberries. For my lunches this week I decided to adopt a Thai motif. Lunch was a hot & sour Thai soup w/grilled pork, bok choy, green onions and mushrooms in a shrimp based stock seasoned with lemongrass, ginger, garlic, lime juice, Thai fish sauce, and Thai red peppers and a Thai beef salad over a plate of lettuce. Dinner was pot roast, fauxtatoes and gravy, and green beans w/onion and tomato.

Nuked a large field mushie with chopped red and yellow cherry tomatoes and shaved parmesan cheese on top for lunch and also made a salad with assorted 'sticks'. Having veggie minetrone soup for dinner - I'm off out to a meeting - so DH is making it! Good boy!!!!

I've finally begun with a good amount of veggies again. My standard is now a big lettuce (2 cups+) salad for lunch and a cup and a half to two cups of veggies at dinner time.

Yesteday I had cauliflower and tonight broccoli (but not that much broccoli but I had 5 raw baby carrots this morning)

I had a nectarine for a snack, a yummy salad with grilled chicken for dinner, then some watermelon. Doing pretty good.

I'll join!

Breakfast: 2 melba toast, 3/4 cup blueberries (3 servings fruit)
snack: protein bar
lunch: tuna fish with lite mayo. 6oz yogurt & 1/2 cup skim milk, 2 melba toast
snack: protein bar
Dinner: 4 cups of brocholi (4 servings veg) and 8oz chicken.

Think that was it.

3 cups of water, 4 cups hot lemon water & 5 cups green tea - yummy!
