| Later, I ate out again with friends (after a mile and a half hike). I had a marvelous Caesar salad with shrimp and 2 stuffed mushrooms. I'm quite sure I got 5 in yesterday! Today I cleaned and prepped 2 bunches of celery, a bunch of radishes, 2 boxes of beautiful strawberries, and 2 heads of cauli. (I made one into fauxtato salad.) I had a salad, some cauli salad, some strawberries, and a small apple. I think I made it to 5 again. I can tell my fiber count has been up since I started posting here again. I write down what I eat in my food journal. Then, I circle the fruits and veggies as I go so I can see how many more I need. How's everyone else doing?

| Yesterday for breakfast I had an omelet with 2 stalks of celery, 1/2 cup onion, and 2 cups of fresh spinach, lunch was a spinach salad w/cucumber, tomato and stuffed olives and a chili rellano casserole, dinner was baked chicken breast, curried rice pilaf and 1/2 an ear of corn. Today was Maggies cereal with dried cranberries for breakfast, spinach salad with grape tomato, cucumber, and stuffed olives and a casserole with cauliflower, broccoli, mushrooms and pork roast in a baked custard for lunch. Dinner will be a large taco salad with lettuce, grape tomatoes, jalapenos, ripe olives and picante sauce. |

| Well I'm a day late and a veggie short again, but hey, I'm BACK at least! I've been doing pretty well - I have a pumpkin muffin for breakfast most mornings, so at least I get a LITTLE towards my allotment right off the bat! Then a small Red Delicious apple for lunch; and at dinnertime, a really big mixed greens salad with olives, red bell pepper, hearts of palm, and whatever else I can find to throw in there, and a protein - one night was chicken, the other was sliced steak on the salad. AND one giant luscious strawberry dipped in LC milk chocolate for dessert! So I'm happy to report I'm doing pretty well with the veggies! Char

| Henry, I was going to warn you about the carbs in the onion, rice, and corn, but since you have lost 115 pounds, I think you've got it figured out! Good for you! I forgot to post yesterday! Today I had some radishes, celery, and baby carrots for snack. At lunch, I had leftover chicken/broccoli alfredo. For dinner, I had fauxtato salad and some turkey chili (had diced tomatoes).Just a side note: flaxseed meal will help thicken chili, add protein and fiber, and you'll never realize it's in there. Looks like I came up short today. If it weren't so late, I would go in there and have a couple of strawberries!

| Maxi, Sorry I was not too precise in my post. The curried rice pilaf is made with cauliflower. I posted the recipe in the cooking forum. I got the corn recipe from an Atkins article and 1/2 ear is all I will have until I get closer to maintainance. In fact, the corn was actually a mistake. This last week I did not do a good job of planning my menus before I went to the store. Corn was on sale, so I asked my wife to get 3 ears, planning on working them into the weeks menus. They did not really fit with what I ended up planning, but as I hate to throw away food, I used in with that meal. I will have the other half tonight. That brings me to today. Breakfast was an omelet with 1 cup celery, 1/2 cup onion, and 2 jalapeno peppers; lunch is a lettuce salad with grape tomatos, cucumber and stuffed olives and a square of chile rellano casserole; dinner will be a spinach salad with bean sprouts, hard boiled eggs, bacon, mushrooms and green onion, grilled pork and 1/2 ear corn. |

| I finally got in my five! Actually I shouldn't have since I'm back to induction and the brussel sprouts kind of threw me over but not by so much that I'd call the day a bad one. So I had two cups lettuce for lunch = 2 servings, four small zucchinis for supper which came out to I don't know how many but at least 2 servings and 12 brussel sprouts = 2 servings. Today will probably be a little less because all those veggies put me over on carbs but I'm going to get in at least four with salad at lunch and some veggie tonight.

| I ended up with a lot of salad yesterday. It's been in the 90's and too hot for anything but salad. Nice romaine lettuce salad for lunch and a big chef salad for supper.

| I've done really well today - for lunch, had a serving of romaine salad, and a serving of shredded cabbage with pico de gallo (fresh tomato salsa); and for dinner, I had 2 servings of oven-roasted asparagus, 1 of oven-roasted red bell pepper, and a GIANT salad of baby romaine, Calamata olives, garden green onion, hearts of palm, jarred roasted pimiento, and sliced banana peppers. I musta got a good 7 servings of veggies in today! Wahoooo! Char

| Good for you, Char! I rarely make 5, much less more than that! I haven't even been online in the last couple of days and I haven't been keeping my food journal, either. Things have been just a little crazier than normal here! I've been eating my raw veggies for snacks at work and I've had fauxtato salad almost every day. And green salad with dinner. So, I've done alright. So far today I've had a small apple as my only f/v. We are going to DH's boss' house for the annual company picnic. I really blew it last year! We are planning to stop and pick up a fruit tray to take and some lowcarb wine coolers (Bartles and Jaymes). I really want to stay on plan this time. I'll report back later.

| I knew that today was going to be a struggle as I had a 10:30 tee time in a tournament. Breakfast was Maggie's cereal with dried cranberries. lunch was 2 protein bars. Dinner was Dijon pork chops w/onions, fauxtatoes and green beans w/ tomatoes, onions and bacon and fresh strawberries for dessert.. |
