Still been paddling along with brightly coloured vegetables a priority in my plan. Had some excellent organic blueberries yesterday. I do notice I am much more likely nowdays to order a veggie meal in a restaurant. Knowing my penchant for excess - next I'll need to be watching my veggie intake!!!!!

Breakfast was Maggie's cereal w/dried cranberries. Lunch was a deviled egg and 3 large leaves of lettuce filled with italian seasoned ground meat, sort of like an Italian taco in a lettuce wrap. Dinner was a large lettuce salad w/grape tomatoes, cucumber, green pepper, green onions, and stuffed olives, a chipolte turkey burrito w/onion, green pepper, and celery in a l/c tortilla and a piece of pecan pie for dessert.

Henry, that taco in a lettuce wrap sounds good. I am always mentally scoping out new foods to see if it has dairy in it. I may try that soon.

Today I had green beans and some broccoli/cauli/carrot salad w/mayo. Tonight I had some fruit salad. Probably 3-4 servings today.

We bought a bag of prepped broccoli last night at Sam's. DD actually ASKED for it, so heck yeah, I bought it! We'll steam some of that today and she'll get a slice of cheese on hers. I may use up my clarified butter on mine.

I ate the last of the fruit salad this morning, with help from DD. She loves Cool Whip, so I got some help getting rid of that.

There's also a bag of salad and the leftovers of the veggie tray from Thanksgiving in the veggie bin. I'm sure I'll get my 5 today!

I had the last of the 16 pounds of fruit salad I made at Thanksgiving.....we ate some, people took some home, and I've eaten it every day since! Sounds like something Henry would do! LOL!

And-I had a green salad tonight with my V-8 chili. There's Rotel tomatoes in the chili, but probably not enough in my bowl to call it a serving. This was an okay day.

Today will be brocholi (I'm looking forward to asparagus when I'm done) and I already had my fruit leather.

Maxi, as long as it is good and you don't over do it, there is nothing wrong with fixing mass quantities. Breakfast was Maggie's cereal w/dried cranberries. Lunch was a lettuce salad w/grape tomatoes, cucumber, green pepper, green onions, and stuffed olives, and a chipolte turkey burrito in l/c wrap. Dinner was roast pork, spaghetti squash w/chopped pecans, asparagus, cranberry compote, and pecan pie for dessert.

Henry, I think I just had the idea (in my head) of fixing a large batch for Thanksgiving and it just kept growing....I used a whole cantaloupe, a bunch of grapes, a can of CarbClever peaches, 4 small pears, 3 small apples and a 16 oz. container of strawberries. It just seemed to multiply as I was chopping it up! Everyone loved it and some even took some home...and I still had enough to enjoy for several days.

I was careful with my portions so there was no problem there. At least it was a GOOD large batch, rather than something that no one liked.

Today I had some green beans and steamed cauli at lunch. Tonight I had some leftover chili (has tomatoes in it) and some steamed broccoli DD reminded me to fix. That's it. No fruit, believe it or not.....but aren't tomatoes fruit? I'd say 4 servings for today.

Today I'm switching from my broccoli to brussel sprouts for the day. I love them. I'll be having my fruit leather today too.

I had some leftover steamed broccoli at lunch, some celery and carrot chips for snack, and a little tomato in the chili I had for dinner. Not my best day! (But WAY better than I used to be!)
