| That sounds really good - may have to try that...but, what is tahini? Today was awesome - breakfast was Maggies cereal with strawberries, lunch was turkey with green peppers, and spinach salad with roma tomato, then dinner was turkey (again - lovin' it right now) with cauliflower (fauxtatoes).

| Hiya Biddy22 - Tahini is ground sesame seeds - along the same lines as peanut butters and other nut butters. It can be bought here in a jar - I'm sure the same in other countries. Is cauliflower fauxtatoes? I've been looking and looking on here trying to work out what 'fauxtato' is!!! Thanks! |

| Thanks beachfox - i'm always looking for a new way to do something with veggies. As for the fauxtatoes - they are just fake potatoes. We make them with cauliflower. There are several recipes here for them - I just steam mine until they are real soft, them mash them with butter, cream cheese, and ranch flavored sour cream (enough to make it a creamy mixture, but not too thin), sometimes add shredded cheddar cheese, then bake until slightly browned on top. You can add anything you want to them. Hope that helps!

| Breakfast was Maggie's cereal with strawberries. lettuce salad with grape tomatoes, cucumber, green onion and stuffed olives and italian groung beef w/ marinara sauce for lunch. Dinner was my usual after golf taco salad with lettuce, grape tomatoes, ripe olives, green onions, and chopped jalapenos. |

| I just had fauxtatoes with my baked chicken tenders for dinner. Before I was even done mixing it up, DH was there with his plate, waiting for a serving. I steam it, cool it, and add mustard and mayo, eggs, pickles, and red onion. I'll never miss potato salad! I also had a small can of asparagus, showed to be 2 servings. I had baby carrots for snack today, and half a peach. And a small apple later. Among all that, surely I got in my 5 today! MUCH better than yesterday!

| I'm definitely trying the fauxtato recipes - thanks! Papaya & strawberries are my 2 fruits today - with cauliflower, carrot, green bean, spinach for 5 veg AND didn't need a boost for my walk AND went into town as well coasting along on my curried veggie lunch! woohoo! |

| Look at all you good people eating your veggies! I'm into my second day of my low carb new beginning I have had about a cup and a half of various kinds of veggies and am planning on more this evening. I use to post this thread every month and now I struggle to get in just two servings a day. Time for some positive changes!

| No, I haven't gone vegan on ya'll, but I did have a good F&V day: a tiny peach with breakfast, some baby carrots and another little peach for snack. At lunch I had leftover cauli salad. Dinner tonight was a "Shrimp & Seafood" salad from Long John Silver's. Marvelous! Seriously, though....if I could just convince myself to eat only fruits, veggies, and some protien, I'd be fine....I can always fake the fiber: pills or fiber/protein shakes. I didn't have dessert tonight or last night. I'm trying to break the habit of having a dessert......low carb or not. I am gearing up for a fabulous June. 5-a-day EVERY day in June!

| Breakfast was l/c pancakes with strawberries and whipped cream. Lunch l/c pizza and a clean out the refrigerator salad of lettuce, cucumber, grape tomatoes, and stuffed olives. We fly to Tampa this pm so dinner will be on the road, probably at TGI Friday's. |

| We had breakfast at home, but went for a brief visit out of state, so we ate out twice today. Let's see: I had some spinach in my omelette this morning. At lunch, I had a nice Caesar salad w/shrimp. Dinner was Mexican chicken: had peppers, onions, and avacado slices on it. And I ate the little bit of lettuce that was on the plate. Spinach=1 Salad=2 peppers, onion and lettuce=1 avacado (1/2 sliced)=1 That's 5!! Imagine that! I got in 5 even eating out. I think I'm getting better at this. I am thinking at every meal now: how and I gonna get a veggie in here? LOL! House: smart move, having "clean out the refrigerator" salad before you leave to go on your trip. Nothing to have to throw away when you return. I've had plenty of "COTR" meals. Right now I have some black beans and Asiago cheese I need to find a use for......
