This weekend I did well - we had a cookout so lots of celery, cucumbers, broccoli, and berries, and even a slice of watermelon.

Today was a big cobb salad - but that's it. I'll try harder tomorrow.

Made a really nice dinner tonight - threw garlic, onion and Korma curry powder into tiny amount of oil in the wok - added chopped eggplant, cauliflower and pumpkin and a tblspn of tomatoes (mine were tinned but I checked first for baddie content) and some water and simmered until cooked! I spooned some lowfat natural yoghurt and fresh mint on top of the bowls. I also added a few lima beans - but that may not be an appropriate option on some plans and I'm sure fish or chicken would be just as nice. Eggplant is not always easy to get a good taste with - but this worked fine. Lunch was pesto made with garlic, tiny portion pine nuts and oil and shaved parmesan cheese and filled the processor with fresh basil and coriander and had carrot, cucumber and celery sticks with onion spouts. Also had my fruit shake this morning and strawberries with yoghurt tonight! Yeesssss!

That does sound good, beachfox. I had more cauliflower yesterday. The last of it that I had made so now I can move on. I also had a salad and a strawberry smoothie in the morning. I got all five servings in before supper which is good because I didn't really eat much for supper but a couple slices of cheese and turkey.

Breakfast was sausage and l/c pancakes w/strawberries and whipped cream. Lunch was a lettuce salad with grape tomatoes, green onions, cucumber, and stuffed olives and a square of cauliflower-rice casserole with mushrooms, broccoli, and onions in a custard base topped with bacon and cheddar cheese. Dinner will be a grilled beef patty, zucchini carbonara, and a small mixed leaf lettuce salad.

I did okay yesterday, just no time to check in!

Today, I had veggies w/dip, a small apple, some tomato in my chili, and a salad tonight. Probably not 5, but not bad.

Usual 2 fruits for breakfast shake and intended low fat yoghurt dessert after shopping tonight. Tuna, spinach, basil, coriander, cherry tomatoes, onion sprouts with tiny slice goats fetta for lunch, pear spread with low fat ricotta for beach walk snack (I went late - so thought lunch might have been absorbed and I feel too hungry!) and have veggie and red kidney bean soup on the stove for dinner!

It's June now, Maxibee...should we make a new thread?

I have been doing really well with my veggies. I had to toss out the strawberries because they got moldy...and yes I went to the store and asked for my money back and got it, they shouldn't have gone bad so fast.

Yesterday I had a big salad at lunch and lots of brussel sprouts for supper. I was going to have a peach but they aren't quite ready yet, still in the paper bag so tonight I should be able to have one, which means I will be low on the rest of my carb count today. Well, a small peach (and these are quite small) is only 7 net carbs so I guess I don't have to be too very low.

I just had my peach for lunch instead of dessert tonight. Not quite ripe enough. That's why they were only $0.88/lb. I've been trying to ripen them for a few days. Oh well, at least they won't go bad quickly like my strawberries always do.

Hi - I'm a newbie to this thread. I fell off the low-carb wagon for a while but I'm climbing back on. I've been eating watermelon every day because it helps with my fluid retention as well as being delicious. I had two cups for my 'second breakfast.'

Didn't have the peach today, was too high in carbs to squueze it in. I did manage to have two servings of brussel sprouts for lunch and four servings of broccoli for supper. Mr. Peach can wait until morning.
