| mmmmmmmmmm thanks for reminding me henry! i made up a pan of seasoned ground beef (with chipotle of course!) and i had forgotten that ONE of the many uses i have for it is INDEED the omelet! i might just have to have that tomorrow! |

| Breakfast was cantaloupe and the last bowl of the "oreo" pudding. Lunch was BBQ ribs, baked beans (black soybeans), and cole slaw w/caggage, red bell pepper, onion, & carrot. Dinner was baked parmesean crusted salmon, shirataki w/E-Z Alfredo sauce, and florentine spinach.

| Yesterday I had my customary apple on the way to work, a "side salad' at lunch, another apple in the afternoon, and a small piece of watermelon after dinner. I'm sure I got my 5 for Thursday. Today, I had one apple, and a nice big salad from Long John Silver's. I'd say I had at least 4 servings today.

| We had some frozen mixed veggies - squash, zucchini, red peppers and onions, for lunch. For supper I made a quick chicken soup with the rest of the mixed veggies and some broccoli, and a few brussels sprouts. |

| Breakfast was Maggie's cereal w/dried cranberies. Lunch was vegetable shirataki lo-mein w/pork, bok choy, broccoli, onion, mushrooms, and carrot. Dinner was a lettuce salad w/roma tomato, green pepper, green onions, & stuffed olives, a 1/2 of a rolled chicken breast stuffed with andouille sausage, ricotta & parmesean cheese and green onion, served on top fo Dreamfields linguini w/marinara sauce, and asparagus.

| Breakfast was a 1-min muffin, no fruit. Lunch was a grilled chicken breast with brussels sprouts, green beans cooked with bacon, and a tossed salad with a slice of cucumber and a cherry tomato. Supper was pepperoni, provolone cheese, sliced cucumbers, 1/2 of a roma tomato, a boiled egg, and bran-a-crisp. |

| I had some green beans and broccoli today when we went out to eat, and some watermelon tonight. So, about 3-4 servings today.

| I love salsa too, maybe I will have some when I go to Texas next week. However, this week I am having a little Greek motif. Breakfast eas a chipolte seasoned ground beef omelet w/onion, celery, jalepenos & cheese. Lunch was the last of the baked beans (black soybeans), ham salad w/celery & green onion in lettuce wraps, and 1/2 a Granny Smith apple. Dinner was roast pork, zucchini carbonara, and Greek style roasted brussel sprouts.

| For lunch we had some salad; I just took the greens from the one, because she put grapes in it, and I'm not eating fruit just yet. I made a quick salad of roma tomatoes, onion and cucumber, cut up and dressed with Italian dressing. We also had a little guacamole. Henry, where it Texas you going? |

| Yeah, Henry....this is a BIG state! Edited to add: I almost forgot....I had a broccoli and cheese omelet this morning for breakfast. Just my way of celebrating losing another pound. I used to celebrate with Krispy Kremes....then I'd have to lose that pound and it's friend all over again. Duh! I cooked alot this afternoon: green bean casserole, twice-baked cauli (like bake potatoes with sour cream, butter, green onion, bacon bits, and cheese), pork chops, fruit salad, and Apple Betty. I had some of the gb casserole, some twice-baked cauli, and some Apple Betty for lunch. Dinner was some twice-baked cauli and an almost-too-ripe avacado. I've got lots of fruit salad and cauli in little containers for lunches during this week.

| You'll get it! It's starting to warm up, they're talking 80s this week. San Antonio is always at least 10 degrees warmer than we are. It's 140 miles from us. You doing the riverwalk thing? We love to go to Ripley's and the wax museum. Haven't been there in many years, but it's always a hoot. My DD1 lived there for about 4 years and we go to know the town pretty well. Hope you have a great time! |
