Breakfast was Maggie's cereal w/dried cranberries. Lunch was a lettuce salad w/roma tomato, cucumber, green pepper, & green onion, a bowl of Avgolemono (Greek lemon chicken soup w/spinach), and deviled eggs. Dinner was a lettuce salad w/roma tomato, cucumber, green pepper, green onion, & stuffed olives and a chicken breast stuffed with ricotta & parmesean cheese and andouille sausage over Dreamfields linguini w/marinara sauce.

Henry has Greek soup at lunch. Me? Rolled up ham slices dipped in mayo and leftover fruit salad. (I know the glamour of MY menu has got to really be getting to him.)

I ate the last little bit of Apple Betty for breakfast since I forgot my cell phone and had to make a run back home to get it. Killed my getting breakfast time. That's 1.

And the fruit salad for lunch makes 2....the big green salad for dinner makes 3 and 4, and the fruit salad for "dessert" makes 5.

Wow, I am getting better. Still boring, but better.

Maxi, its whatever works for you. Way to go. Breakfast was a chipolte seasoned ground turkey omelet w/onion, celery, jalepenos & cheese. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, & stuffed olives, a bowl of Avgolemono, and deviled eggs. We had a treat day at the office so I had 3 strawberries that I had dipped in no-sugar melted chocolate. Dinner was a special meal for my Valentine. We started with, as they say in the islands, a pupu plate w/celery stuffed with ham salad and some shrimp with a chipolte cocktail sauce. Next we had asparagus and an eggplant stuffed with shrimp & crab, sauteed onion, green pepper, celery, & mushrooms. For dessert I fixed a baked alaska using the 3 minute chocolate cake as a base. For the ice cream, I took 4 l/c chocolate covered black raspberry bars (1 net carb each) and "squushed" them together and put them in a 1 cup measuring cup to form the ice cream layer. I served it with splenda sweetened chocolate caramel sauce.

I didn't get enough fruit in but loaded up on at least 5 servings of veggies today plus green tea so I think I still did pretty good.

We had leftover catfish and hushpuppies with onion, and buttered green beans for lunch. Supper was black angus steak burgers, browned with some mixed veggies, zucchini, red pepper, onion, along with cauliflower, broccoli and baby carrots.

henry... where do you find the dried cranberries? all i see in the stores i go to are ones that say SWEETENED dried cranberries..

Kim, I first found them in bulk in the produce section. Then I found them on the salad bar at a couple of grocery stores. They were cheaper from the salad bar. lol, so I had them fill up large salad containers for me. They even offered to sell me a 50 pound bag of them.

That dessert sounds good! I had a piece of the l/c Keylime Pie I made. Not bad!

Let's see: half an apple, a cup of fresh fruit salad, a taco salad (no shell)....and I guess that's it. So, around 4 for today.

henry.. i am just curious... when they are on the salad bar, how do you know they are not SWEETENED cranberries? i am just afraid of having sugar in em..

Kim, I asked the manager who checked. Also, the first time I went back to get some more from the grocery store where I had first found them, I noticed a sheen on the cranberries that was not present on what I had previously bought. When the produce manager checked he told me that they had been sweetened. That is when I looked elsewhere and found them on the salad bar of a different store. Those did not have the sheen, but I checked anyway.
