Friday's Breakfast was cantaloupe and Maggie's cereal w/strawberries. Lunch was a lettuce salad and in true clean out the refrigerator mode I made a Texican cauli-rice casserole by combining leftover Texican cauli-rice with the leftover pork burrito filling and then topping it with diced jalepenos and sliced green onion and shredded cheese. (Very tasty) Dinner will be on the road, probably at a Golden Corral as we head out for a long (4 day) weekend.

Breakfast was Maggie's cereal w/strawberries. Lunch was my latest creation, which is something I have decided to call Asian Fusion Tuna Salad because of the combination of Thai and Chinese flavors and some hot & sour soup. Dinner was a lettuce salad and 1/2 of a chicken roll (flattened chicken breast coated with a mixture of ricotta, parmesean, and mozzerella cheeses, and sliced green onion, then stuffed with sliced chicken andouille sausage and rolled up.) served on Dreamfield's linguini w/marinara sauce.
