Monday's Breakfast was cantaloupe and Maggie's cereal w/blueberries. Lunch was cucumbers & onion vinegrette and a piece of Nacho Ordinary Strata. Dinner was Beef Strogonoff, cauli-rice, and stir fried green beans w/mushroom & onion.

Welcome Deanne. Tuesday's Breakfast was cantaloupe and a ham & cheese omelet w/celery and jalepenos. Lunch was cucumbers & onion vinegrette and a piece of Nacho Ordinary Strata. Dinner was a lettuce salad and a piece of Dreamfield's Spaghetti Pie.

Friday's Breakfast - Cantaloupe and Maggie’s cereal w/blueberries.
Lunch - Lettuce salad and a piece of Nacho Ordinary Strata.
Dinner – Tonight we hosted our book club. Since our book is about a period of French history, I decided to make l/c French Hors d'oeurves. After doing a search for French appetizer recipes, I found several that either were or could be made l/c friendly. I noshed on them for dinner. I served deviled eggs, (OK, so deviled eggs are not French, but one of our members, a 90 year old retired minister, loves my deviled eggs, so I fixed them for him.), carrés d'artichauts et fromage (baked artichoke and cheese squares), sliced chicken cordon bleu appetizer, (boneless rolled chicken breast stuffed with garlic & herb cheese and a slice of ham), beignets courgette (zucchini fritters), roulade jambon (ham rolls stuffed w/cream cheese, roasted red pepper and green onion), and assorted veggie crudite. For dessert, I served a l/c version of the classic French dessert Coeur a la Crème but instead of the traditional raspberry coulis, I offed a choice of either peaches and strawberries marinated in Grand Marnier, pureed strawberries and orange juice or blueberries in my l/c blueberry syrup with highlights of cinnamon, lemon, and vanilla. I had the blueberries.

Saturday's Breakfast - Deviled egg, a couple of artichoke cheese squares, and a small piece of coeur a la creme w/blueberries in l/c syrup.
Lunch - The last of the cucumbers & onion vinegrette, Beef Strogonoff, and cauli-rice.
Dinner - Lettuce salad and a piece of Deep Dish Pizza Supreme.

Lunch was a sliced tomato from the garden and a deviled egg roll w/ham & cheese. Dinner was a grilled chicken breast, twice baked fauxtatoes, and asparagus.

I have been getting so many veggies in lately I think I'm turning into one. I have a garden and it's like feasting time now. I LOVE it!

Barb, if you are not eating veggies, you are not following a l/c lifestyle!! I don't think my nose is twitching yet, but the yard rabbit is looking at me strangely.
Today begins the "clean out the refrigerator" sprint to the weekend when we leave for 11 days of R&R and a visit with the grandkids.
Tuesday's Breakfast - Maggie's cereal w/strawberries.
Lunch - Assorted veggie crudite and a piece of Deep Dish Pizza Supreme.
Dinner - Taco salad.
