Monday's Breakfast was Maggie's cereal w/cranberries. Lunch was grilled pork and shrimp primavera in a white wine & cheese sauce. Dinner was roast pork, twice baked fauxtatoes, and green beans.

Tuesday's Breakfast was an Italian sausage omelet w/celery. Lunch was grilled pork steak, curried cauli-rice pilaf, and broccoli, onion, and mushrooms in cheese sauce. Dinner was an oven fried chicken breast, Dijonaise & cheddar crusted baked cauliflower, and asparagus.

Hi Henry,

Your menus are very creative and inspirational! I'm a long-term lowcarber and LCE lurker (since 2001) and am now a new member at LCE. Two years ago I learned I had food and chemical sensitivities. Now I'm completely gluten-free, dairy-free, caffeine-free, preservative-free, etc. - sort of paleo. I love meat, fish and eggs and limited fruits, but I tend to get very routine and boring with my veggies.

I'd like to join this thread for a while to help re-focus on getting a variety of good fruits and veggies every day.

Yesterday I had blueberries with my egg breakfast. I had salsa with my burger at lunch time. I went out for a steak dinner with my folks last night and had an amazing roasted veggie salad with mixed greens, zucchini, squash, asparagus, peppers, and onions.

Sharon, I glad to have the company. My grandchildren have gluten, dairy, and egg sensitivities, so I have seen how much of a challenge it can be to find alternatives that they can eat. Here is a link to a recipe that you might like (I think jicama is gluten free, but I don't know for sure) Swiss l/c Hash Brown "Potatoes" (just omit the cheese and the butter and it will be one of the national variations of Rosti).

Thanks for the recipe link. I've never tried jicama. I'll look for it the next time I go to the grocery store.

Today I had raspberries and blueberries with my egg salad breakfast. Handful of nuts at lunchtime. Beef chili for dinner. Had a Larabar for dessert (dates & cashews). It was a little too high in carbs and caused some sugar cravings. Unfortunately, I didn't stop at one! (Oh no!) I'll have to save these for meal replacement emergencies only.

Breakfast was eggs scrambled with cabbage and carrots. Lunch was chicken wings with blueberries. Dinner was broiled wild salmon with dill (YUM!), mixed greens, carrots, and blueberries.
