Today I had some Apple Betty for breakfast (that's a long story!), a salad for lunch, and that's it. BUT........I went to the grocery store tonight and now we have some fresh fruits and veggies.

Yesterday was fruit juice and broccoli with hot salsa.

Today is 1/2 banana and peaches and for veggies will be spinach salad and hot salsa.

Yesterday I got all my veggies at lunch. We had what I called potpourri, just a bunch of leftovers made into soup. When I told my husband what I'd called it, he asked if it was because I'd poured all of it into the pot, thus potpourri. Funny, hon.

It had chicken, ground beef and ham, mushrooms, yellow squash, broccoli, brussels sprouts, tomatoes, and spinach, at least, maybe more stuff. Lots of good broth, and the taste was excellent.

We had left over roast with onions for lunch. For supper our son-in-law made kebobs with onions and mushrooms, and an asparagus mix with broccoli and carrots, and a napa cabbage slaw. And there was brisket and sausage. Good stuff.

An apple, one half at at time. Some green beans, and some (hopefully not too much) fried okra. Better tomorrow.....starting with a spinach and Swiss omelet.

I had salmon and eggs instead of spinach and eggs. And 3 or 4 green beans before I dropped the bowl on the floor. Nothing else until I had some strawberries later. Not a good F & V day for me.

It is good to be back home. Breakfast was a chipolote seasoned ground beef omelet w/celery, onion, jalepenos & cheese. Lunch was a couple of ham & cheese lettuce wraps and a couple of celery stalks filled w/peanut butter. Dinner was a lettuce salad w/roma tomato, cucumber, green onions, and stuffed olives and shrimp in chunky tomato cream sauce w/onion, celery, and green pepper over Dreamfields linguini.

When we got back from church, and retrieving our offspring from the Granny, I started cooking. I made chicken fried steak, green bean casserole, broccoli and cheese, and fruit salad. I had just green bean casserole and some fruit salad for dinner tonight, and packed the rest of the broccoli and fruit salad away for lunch tomorrow.

The fruit salad was so pretty: I used Granny Smith apples (unpeeled), strawberries, and canned CarbClever Peaches. So pretty with the green, red, and orangey-yellow.

Just a hint: (maybe Henry will include this hint in his book...)If you use the CarbClever canned fruit, put it in the bowl first, then add the apples and stir well.....the citric acid in the fruit syrup will keep the apple chunks from turning brown. Of course, I added the strawberries last because they are more delicate....I didn't want to stir them too much.

Saturday we had to skip lunch, but we had brussels sprouts and green beans with our sirloin steak for supper.

Sunday we had no veggies until supper. Kinda had to eat lunch on the run, so we had the 1-min muffin with scrambled eggs and sausage. But for supper I steamed the little bits of asparagus, brussels sprouts, and the broccoli/cauliflower/carrot blend, and we had that with cheese and summer sausage and pepperoni. Got home too tired to cook.

You guys I feel so good today! I'm so glad that I'm eating healthy because I've never felt better in my life. Today will be peaches (how great is that) and a huge spinach salad for dinner. I can't believe it took me so long to take care of myself though if I knew how great this is I would have started a long time ago. I can't help being proud of myself and my cupboards even. I made an announcement the other day that I would not be buying cookies anymore for them either. I can buy a lot healthier version food including frozen yogurt! Only 90 calories per 1/2 cup and oh so good!

Way to go Heather. Maxi, I have not seen the carb clever brand, I will look for it. Good suggestion about the fruit salad, though probably a few too many carbs for me right now. Breakfast was Maggie's cereal w/strawberries. Lunch was a lettuce salad w/roma tomato, cucumber, green onions, and stuffed olives, and a chicken breast stuffed with ricotta & parmesean cheese and andouille sausage, smothered in my chunky tomato cream sauce w/tomato, onion, celery, and green pepper. Dinner was braised pot roast, fautatoes and gravy, and broccoli.
