Lunch was cheese and summer sausage and pepperoni with napa cabbage slaw.

Supper was a little bit of 2 casseroles, one Mexican made with black soybeans, tomato sauce, ground beef, layered with lc tortillas and cheddar cheese, seasoned with chili powder. One Italian with tomato sauce, ground beef, layered with ricotta cheese, parmesan cheese and lc tortillas, flavored with Italian seasonings. We had steamed zucchini with those.

I had leftover broccoli and cheese, and leftover fruit salad for lunch.....and a green salad with avacado at dinner.

In honor of Shrove Tuesday, Breakfast was sausage and l/c pancakes w/strawberries & whipped cream. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, & stuffed olives, and Mile High Shredded beef over fautatoes. Dinner was a reprise of the lunch salad (different dressing), and shrimp in chunky tomato cream sauce over Dreamfields linguini.

Breakfast was cantaloupe and Maggie's cereal w/strawberries. Lunch was a lettuce salad w/roma tomato, cucumber, green onionsm and stuffed olives, and a rolled chicken breast stuffed with ricotta & parmesean cheese and andouille sausage smothered in chunhy tomato cream sauce w/tomato, onion, celery, and green pepper. Dinner was braised pot roast, fautatoes and gravy, and broccoli.

Small apple with breakfast, salad and apple at lunch, salad w/half avacado at dinner. All yellow and green, but that's my 5.

This will be an experimental weekend. Breakfast was Maggie's cereal w/strawberries. Lunch started out with me making the filling for a chipolte seasoned ground turkey burrito w/onion, celery, and jalepenos. However, while preparing it, I decided that rather than fill a l/c tortilla with it, I would chop a bed of lettuce and serve the filling on top of it, so I guess lunch was a "burrito salad". Dinner was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives and a square of "Chile Rellenos Casserole". For dessert I had a dish of my first attempt at faux apple crisp using zucchini with some unsweetened dried cranberries added, topped with whipped cream. Next time I will reduce the amount of sweetener as the dish while very tasty, is a little too sweet. My wife thinks it would be good on pancakes and is sorry she dosen't have any vanilla icecream to put it on.

For lunch I had grilled salmon with a garden salad, and I asked for broccoli, but also was served baby carrots and a couple of pieces of squash. I was good and avoided the garlic cheese biscuits. (It was Red Lobster)

For supper I made a quick romaine salad with sliced grape tomatoes and diced ham with raspberry vinaigrette and topped with shredded parmesan cheese.

I had salad, asparagus-n-mushroom casserole, fruit salad, and more casserole later. I'm sure that equals my 5 servings for today.
