| Breakfast was sausage and l/c pancakes w/strawberries & whipped cream. Lunch was 4 cervings of celery stuffed with ham salad and a serving of zapple pie filling for dessert. (I have decided that the faux apples I made yesterday were so good that they deserved a name. The product would make a prefect apple pie filling so I decided to call it "Zapple". By the way Nita, I took your idea of using Atkins apple juice mix but used some sugarfree spiced apple cider mix as the base for cooking the zucchini. The shape of the slices w/o the seeds looks like apples and the texture reminds me of apples from canned apple pie filling.) Dinner was a grilled hamburger steak, snow peas, and a new dish that I will call Rosti Fauxtatoes. I prepared shredded cauliflower like I do for cauliflower rice, but fryed it in diced bacon and onion and topped it with shredded cheese, like the original Swiss hash brown potato dish. All in all, a good weekend with 2 new recipes that are definite keepers.

| I cooked a bunch today so I would not have to cook tonight or tomorrow night....I have a meeting to go to. This included: fried pork chops, baked ribs, bacon (for b'fast all week), steamed broccoli and cheese, fruit salad, and 2 l/c Key Lime Pies. I was going to make Green Bean Casserole, but I didn't have any Seasoned Green Beans. I use cream cheese, unflavored gelatin, heavy whipping cream, vanilla extract, Splenda, Key Lime juice, and food coloring in the filling. For crust, it's almond and flax seed meals, Splenda, and a dash of cinnamon all held together with melted butter. Each time I make this, it gets better and better!

| We shopped Saturday, and I finally have some decent fresh veggies! We had sliced cucumbers and 1/2 and avocado with some pork loin for lunch. For supper we had a romaine salad with cucumbers, grape tomatoes, and red, yellow and orange bell peppers. DH had chicken salad with his, I had tuna salad. This morning I had lc hot cereal with my freshly dried cranberries, which took forever to dry in the dehydrator. I finally discovered that I had to poke them with a knife to release some liquid, and they dried quite rapidly after that. They are very good. |

| For lunch we had a salad - romaine, cucumbers, red, orange and yellow bell peppers, grape tomatoes, pepperoni, and 1/2 avocado. For supper we had pork loin with Steel's apricot jelly on it for a nice sauce, and spaghetti squash. |

| Breakfast was Maggie's cereal w/zapple pie filling. Lunch was a lettuce salad w/roma tomato, cucumber, green onion and stuffed olives and a square of chile rellenos casserole. Dinner was salmon poached in white wine, shirataki w/alfredo sauce, and spinach florentine.

| Fruit salad at lunch, green salad w/avacado at dinner. That's it. Colorful, but not enough. The fruit slad this time was strawberries, CarbClever peaches, apples, and cantaloupe.

| For breakfast: 1/3c. brown rice with butter, skim milk w/ no sugar chocolate and 1/2 cup fruit juice. I'll have fruit juice with snack and lunch too. snack will be protein bar lunch: lean cuisine meal snack: protein bar and dinner: brussel sprouts and I believe it is shrimp night. Today: 3 fruits/3 veggies/2 starch/1 dairy/1 fat/2 proteins and 2 snacks of items under 200 calories. Good day of under 1300 calories! |

| Lunch was a repeat of supper last night, pork loin with apricot jam, spaghetti squash, and strips of red, yellow and orange bell pepper. Supper was Dreamfields spaghetti with diced chicken breast and broccoli in a sour cream and parmesan cheese sauce, with cherry tomatoes on the side. Yellow, red, orange and green. Nice colors. |

| Today is a yummy day of zucchini pie which is going to count for my veggies of course. It only has nutmeg, vanilla, 2 TBLS of flour, zucchini of course, egg beaters and butter spray in it so for my 3 servings of veggies it comes to 186 calories but my fruit juice only has 15 calories for the 1/2 cup I can have each so this should still be fine for my system. Still under 1300 calories for the day! |

| Breakfast was Maggie's cereal w/zapple's. Lunch was a large chopped cobb salad w/lettuce, tomato, avacado, HB egg, bacon, and chicken and a Zapple & spice One Minute Muffin. Dinner was salmon poached in white wine, shirataki alfredo, and spinach florentine.

| Lunch was leftoer tuna salad with an avocado, bell peppers and cherry tomatoes. Supper we had pork loin with the last of the spaghetti squash, and we finished off what peppers I had cut up. Tomorrow I need to cup up a cucumber and more peppers. Might marinate them in Italian dressing. |
