| I had a Caesar salad (no croutons, of course), and some melon and pineapple (heavy on the melon, light on the pineapple). More colorful, just not more plentiful. :(

| Hey, I forgot I had some "Texas Red Chili" yesterday...not much, but it had tomato, peppers, and onion in it. Today, I had an apple, another apple, a green salad, some asparagus/mushroom/cheese (yikes, dairy!)mix, and a piece of watermelon. Yellow, yellow, green, green, red. Wow!

| Breakfast was Maggie's cereal w/dried cranberries. Lunch was a mixed leaf lettuce salad w/roma tomato, green pepper, cucumber, green onion, and stuffed olives and a Chipolte flavored pork burrito w/onion, celery, & green pepper in a l/c tortilla. Dinner was a baked chicken breast, twice baked fauxtatoes, broccoli, and cranberry relish.

| uh... henry.... i want to eat at YOUR house! *grin*.. and some of the forum have BEEN there... so i can get directions *L* i had the most veggies i have had in one day in AGES! cauliflower... green beans... lettuce.. cabbage and a bit of carrot (okay it was a salad mix.. sue me! *L*) AND brussel sprouts! amazing... i oughta do that more often.. i have been exTREMEly lax in my veggies for WAY too long... |

| Kim's right, Henry. You can cook for me anytime. Yesterday for lunch we finished off the sauerkraut. For supper we had another piece of veggie quiche and a salad with romaine, cucumbers, green onion, and broccoli. I made a faux rice pudding with shredded cauliflower. Technically, nuts are the fruit of the tree, so we ought to be able to count them as a fruit, right? No? Sigh. Oh, well. I tried. |

| Kim, to paraphrase Horace Greely, go east young lady go east. Seriously, if you ever get in the neighborhood and don't drop by, I will be personally offended. Nita, nice try. I tried that rationale once with chocolate which is made from a bean which comes from a plant. If it comes from a plant, its a vegetable, right? A while back, I had been thinking about trying to make a "rice" pudding out of cauliflower-rice, but never got arround to trying to find/create a recipe. What do you do, and how is it?

| Henry, I just shredded some cauliflower, beat in some eggs, used some Carb Countdown milk and cream, splenda and cinnamon, nutmeg and cloves, and baked it. Next time I think I'll add a little vanilla, and maybe use some DaVinci's syrup instead of the splenda. I stay away from all dried fruit at this point; otherwise, a tablespoon or 2 of raisins would be nice. We had ours with whipped cream; it was still warm. The rest is in the fridge; it might be better cold. I'll let you know. |

| Nita, in my musings, I was thinking that some cardamom might work well to mask what little cauliflower flavor, if any, that was present, along with some cinnamon and fresh grated nutmeg. I also was going to use some unsweetened dried cranberries which I find to be a great substitute for raisins.

| henry... i take that as a bonifide offer! if i am ever in that neighborhood i will take you up on it.. you got raves from the ladies that met at your place before right? ;-) today..hmmmm some cauliflower... green beans... lacking three things i guess? dinner isnt planned yet.. might have to be all veggies *L* henry... carb count on the cranberries? |

| Kim, that was indeed a bonafide offer. I think the ladies enjoyed the food. As for the cranberries, fresh cranberries have 7.19 net carbs per cup. I have not found a count on unsweetened dried cranberries, so what I do is assume that 1/2 cup of dried cranberries, if rehydrated, would equal about 1 cup of fresh cranberries. Therefore I figure the dried cranberries at 7 grams net carb per 1/2 cup. Breakfast was an omelet w/onion, celery, jalepenos, ground meat & cheese. Lunch was a mixed leaf lettuce salad w/roma tomato, green pepper, cucumber, green onion, and stuffed olives and a chipolte seasoned pork burrito w/onion, celery, and green pepper in a l/c tortilla. Dinner was sugar snap peas, meatballs and sauteed mushrooms in a sherry flavored mushroom cream gravy served over cauli-rice.

| oh you POOOOOOOOOOOOOOOR dear... those people doing LC have to eat SUCH boring stuff.. NOT! yummy food today henry... everyone should eat so well! thanks for the carb count on the cranberries.. sounds reasonable to me.. i had a pickle... wooooooooohoooooooo one more veggie down! |
