Breakfast was Maggie's cereal w/strawberries. Lunch was a lettuce salad w/roma tomato, cucumber, green pepper, green onion, and stuffed olives, and a chipolte seasoned grilled pork burrito w/onion, celery, green pepper, and jalepenos in a l/c tortilla. Dinner was a large taco salad w/lettuce, roma tomato, ripe olives, green onion, jalepenos, and taco meat.

Yesterday was a couple of small peaches, and a big yummy salad. I'll post tonight about today. (I am actually on my lunch "hour" using my boss' computer...and I ate lunch!)

We've been having lots of salad, at least 2 a day, with cucumber, red & green peppers, jicama, sometimes tomato and/or onion, today we had ham and split a leftover burger. We'll probably finish up the romaine tonight, and maybe the spinach.

We are in full "clean out the refrigerator" mode as we get ready to leave tomorrow for a long weekend in St. Louis. This will be my last post until we return on Tuesday. Breakfast was sausage and l/c pancakes w/strawberries & whipped cream. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives, and a chipolte seasoned grilled pork burrito w/onion, celery, green pepper, and jalepenos in a l/c tortilla. Dinner was a lettuce salad w/tomato, green pepper, cucumber, green onion, and stuffed olives, and a piece of deep dish pizza quiche w/onion, mushrooms, green pepper, ripe olives, and ground beef.

Some of the best meals are the "clean out the fridge" or "pantry" meal!

I've been lax on veggies. Really bad. We ran out of lettuce, so I made a salad of Napa cabbage, and it was very good. We're eating cherry tomatoes out of the garden, too. And I put some jicama with the salad. It needs to be eaten up, got a bad spot on it, and I'm having to cut around it. Guess I need to go to the store and stock up on veggies.

Breakfast was cantaloupe and Maggie's cereal w/unsweetened dried cranberries. Lunch on the road was a couple of McDonalds double cheese burgers w/o ketchup & bun and a side salad. Dinner was a grilled steak, mushrooms sauteed in butter & sherry, and a large spinach salad w/bean sprouts, mushrooms, green onions, bacon & hb egg.

Henry, I've had that same lunch so many times when I was still doing coffee deliveries.....I suppose there are alot worse things to have!

Today:Small apple at breakfast, cauli salad with lunch, more with dinner, along with a green salad, then watermelon later. Wow, that's the best day I've had in a while!

Lunch was a lettuce salad w/roma tomato, green onion, cucumber, and stuffed olives and a rolled chicken breast stuffed with 3 cheeses & andouille sausage. Dinner was a large taco salad w/lettuce, roma tomatoes, jalepenos, green onion, ripe olives, taco meat & cheese.

Today we're eating what was in the fridge after I cleaned it out and threw out stuff. I sauteed a big skillet full of bokchoy, onion, celery and cabbage, all stuff that needed to be cooked NOW or thrown out in a few days. So I have a nice bowl of sauteed veggies just waiting for something else. And we're eating cherry tomatoes out of our Earth Boxes, and they are luscious, even though they are orange, not red.
