Today we officially entered a week of "clean out the refrigerator" mode. While I was apportioning the deep dish pizza quiche from last night so that I would have some for my airplane lunch on August 2nd, I decided to have some cold for breakfast. Lunch was a philly cheesesteak omelet w/onion, celery, jalepenos, steak & cheese. Dinner was grilled hamburcer patty, eggplant parmesean, and green beans w/tomato and onion.

I did some cleaning out of the refrigerator too. Had to finish up some tofu before it went bad and some luncheon meat. For fruit I had peaches and veggies was asparagus.

Still here, haven't done so good in this area the last few days. Been eating a lot of junk while feeling a bit under the weather. Today was much better with tomato soup and peaches.

Breakfast was cantaloupe and Maggie's cereal w/dried cranberries. We had a birthday in the Department today and I had some celery, broccoli, and cherry tomatoes w/ranch dip, and a piece of a low carb pie I created. It is a pina colada pie but for which I used peeled, seeded, and shredded zucchini marinated in Davinci Pineapple Splenda syrup to replace the crushed pineapple, and unsweetened coconut (which I sweetened with liquid Splenda). Lunch was a lettuce salad w/cherry tomatoes, cucumber, green onion, and stuffed olives, and Italian seasoned ground beef w/marinara sauce & cheese. Dinner was a reprise of the lunch salad, a piece of taco pie w/salsa, and for dessert, a piece of the pina colada pie, topped with whipped cream sweetened with Davinci Pineapple Splenda Syrup.

"Clean out the refrigerator" kicked in in earnest today. Breakfast was cantaloupe and an Italian seasoned ground beef omelet w/onion and green pepper. For lunch, I took a lonely zucchini and made, what I call "Quick and Easy Stuffed Zucchini" (A microwaved hollowed out zucchini stuffed with Italian seasoned ground beef, marinara sauce and cheese.) and the last of the eggplant parmesean. Dinner was a deviled egg,a large ham & cheese chef's salad w/lettuce, tomatoes, cucumber, green pepper, green onion stuffed olives, hb egg, ham, and cheese, and a l/c ice cream bar for dessert.
