Yesterday I had the veggies in the quiche, zucchini, peppers and onions, and the rest of the salad, romaine, cukes, broccoli, and green onion. For supper we had mashed cauliflower, and for snack we finished off the faux rice pudding, so more cauliflower. Looks like I need something yellow and red now.

Nita, how was the faux rice pudding cold? Did the cloves overpower the flavor?

Breakfast was Maggie's cereal w/dried cranberries. Lunch was a steak salad w/lettuce, tomato, cheese, cucumber and red onion. Dinner was a baked chicken breast, twice baked fauxtatoes and sugar snap peas and 1/2 of a 3 min. chocolate cake.

Henry, the rice pudding was pretty good cold. Next time I think I'll use a little more cinnamon.

I had tuna salad made with sf sweet pickle relish and cucumber slices for lunch, cheese pizza with the chicken crust (see the cooking threads for the recipe) and broccoli with green onion dip. Could have had more veggies, but got busy making Henry's pecan pie, and all I had time for was the broccoli.

Kim.....Henry has "yummy food days" every day!

Not much recollection of yesterday's food, so I'll post for today: an apple, another apple, and some spinach/artichoke dip. Not my best effort.

Today is going to be pineapples and broccoli. Yesterday I changed my mind and had brussel sprouts instead of brocolli for dinner - yummy.

Breakfast was an omelet w/onion, celery, jalepenos, ground meat & cheese topped with some chipolte seasoned l/c ketchup (ketchup is still a veggie?). Lunch was a mixed leaf lettuce salad w/roma tomato, green pepper, cucumber, green onions, & stuffed olives and a chipolte seasoned pork burrito w/onion, celery, & green pepper. Dinner was sugar snap peas, sauteed mushrooms and meatballs in sherry flavored mushroom cream gravy over cauli-rice.

maxi... yeppers.. henry seems to be quite the cook! i gotta get to that part of the states someday!

yes henry.. use the ketchup as a fruit or veggie *L*

i had cauliflower.. brussel sprouts.. green beans... (saving the salad mix for later.. lettuce cabbage bit of grated carrot)

hey.. i am TRYING to get the veggies in more ...

I had steamed cauliflower, broccoli and baby carrots with diced chicken breast, with shredded cheese and a sprinkle of parmesan for lunch.

For supper, a ground beef, spinach and cheese casserole I saw on the cooking thread this morning.

"Clean out the refrigerator" kicked into high gear today as we get ready to leave tomorrow for our annual trip to Southern California. Breakfast was Maggie's cereal w/dried cranberries. We had a birthday to celebrate at the office today, so I had a couple of servings of strawberries, a few blueberries, and a slice of cheese. Lunch was a large lettuce salad w/cucumber, roma tomato, green pepper, green onion, & stuffed olives and a chipolte seasoned pork burrito w/onion, celery, & green pepper. Dinner was a reprise of the lunch salad and sauteed mushrooms and meatballs in a sherry flavored mushroom cream gravy.

Hey, everyone! What colorful eating you are all doing!

Friday: 2 apples, fried okra, broccoli.

Today: green bean casserole (2 servings), green salad, and fruit salad.....if you count CarbClever peaches with chopped apple in it as fruit salad!

Yesterday - leftover casserole that had spinach. Supper, onions, peppers, cauliflower, broccoli and baby carrots.

So far today, at lunch I cooked green beans with bacon and onions and a little bit of diced tomato. I may cook up a spaghetti squash for supper. I still need to buy some berries of some kind. I really like them for an evening snack.
