| Sunshine, the chestnuts in that recipe really increase the carb count. According to the USDA Nutrient database, chestnuts, depending on the type, have about 12-14 carbs per ounce with no fiber. That makes them about the highest carb content nut around. I found this quote that might be of interest to you. "In southern Europe in the Middle Ages, whole forest-dwelling communities which had scarce access to wheat flour relied on chestnuts as their main source of carbohydrates." I think you could use some walnuts or pecans instead of chestnuts in that recipe and make a nice low-carb side dish for the holidays.

| Today was an Italian themed day. Breakfast was an Italian seasoned ground beef omelet w/onion and celery. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives and a serving of zucchini lasagna w/onion, mushrooms, and groung meat. Dinner was a reprise of the lunch salad and Dreamfields linguini w/meat sauce.

| Breakfast was cantaloupe and Maggie's cereal w/dried cranberries. Lunch was the last serving of zucchini lasagna w/mushrooms, onion, cheese and ground meat. Dinner was grilled steak, twice baked fauxtatoes, and broccoli.

Dinner was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives and shrimp in tomato cream sauce w/onion, green pepper, and celery servrd over Dreamfields linguini.
