Sunshine, the chestnuts in that recipe really increase the carb count. According to the USDA Nutrient database, chestnuts, depending on the type, have about 12-14 carbs per ounce with no fiber. That makes them about the highest carb content nut around. I found this quote that might be of interest to you. "In southern Europe in the Middle Ages, whole forest-dwelling communities which had scarce access to wheat flour relied on chestnuts as their main source of carbohydrates." I think you could use some walnuts or pecans instead of chestnuts in that recipe and make a nice low-carb side dish for the holidays.

Today was an Italian themed day. Breakfast was an Italian seasoned ground beef omelet w/onion and celery. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives and a serving of zucchini lasagna w/onion, mushrooms, and groung meat. Dinner was a reprise of the lunch salad and Dreamfields linguini w/meat sauce.

Breakfast was cantaloupe and Maggie's cereal w/dried cranberries. Lunch was the last serving of zucchini lasagna w/mushrooms, onion, cheese and ground meat. Dinner was grilled steak, twice baked fauxtatoes, and broccoli.

Sunday breakfast was cantaloupe and a philly cheesesteak omelet w/onion, green pepper, celery, and jalepenos. Lunch was a ham and cheese lettuce wrap and a deviled egg. Dinner was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives and shrimp in tomato cream sauce w/onion, green pepper, and celery servrd over Dreamfields linguini.

Dinner was a baked chicken breast, twice baked fauxtatoes, buttered sugar snap peas, and cranberry relish.

Veggies - green beans for snack because hey, I love green beans! For dinner I'll have a nice zesty italian salad.

Fruit: banana's because they are a great source of potassium, I've been working out a lot and don't want leg cramps!

Still here with you all. Just still been having those back spasms bad and its hard to sit here at my computer for to long. Have my back brace on for them to and it helps alittle.

Thanks Heather, you too. I suppose as you get older, it dosen't take much to excite you. That must be why I am excited about trying a couple of new recipes this weekend and one for Thanksgiving.:fork:

Breakfast was cantaloupe and Maggie's cereal w/dried cranberries. Lunch was a lettuce salad w/grape tomatoes, cucumber, green onion, and stuffed olives and a chipolte seasoned pork burrito "blowout" with the last of the pork filling w/onion, green pepper, celery and jalepenos. Dinner was a baked chicken breast, twice baked fauxtatoes, sugar snap peas, and cranberry relish.
