Breakfast was Maggie's cereal w/dried cranberries. Lunch was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives, and a piece of zucchini lasagna. Dinner will be roast pork, twice baked fauxtatoes, and Asian Fusion Roasted Brussel Sprouts.

Breakfast was sausage and l/c pancakes. Lunch was a lettuce salad w/roma tomato,cucumber, green onion, and stuffed olives, and a piece of zucchini lasagna. Dinner was parmesean crusted oven fried chicken breast, twice baked fauxtatoes, and green beans w/tomato and onion.

Dinner was a lettuce salad w/roma tomato, cucumber, green onion, and stuffed olives, and a piece of deep dish pizza quiche supreme w/ground beef, sausage, pepperoni, onion, green pepper and mushrooms and the last piece of Cape Cod Cranberry Velvet pie.

Rhonda, I have just posted the recipe in the cooking forum. Berta, when I started this WOE, I realized that I would need to have variety of good tasting food to keep from getting bored. However, what I did not anticipate was that this WOE would refresh my interest in cooking with the changes that would be necessary to make some recipes low carb. I started by looking at a lot of low carb recipe web sites and copying recipes that looked interesting, then it was just a matter of trial and error to find those dishes I liked that I could build menus around. From there, I began converting some of my favorite recipes to low carb. I must confess that I am a closet cookbook reader. Now, when I look at a recipe if it looks interesting, I look to see if I can convert it to low carb and then I try it. Even after finding one I like, I continue to tweak to add additional interest. For example, tonight I am fixing a special dinner for my DW and me to have a quiet New Years Eve dinner. The entree is one that I created from a low-fat cookbook recipe for a side dish that I made before I began this WOE and which after starting this WOE, I made into a main dish by adding seafood. Tonight I will try adding some artichoke hearts and mushrooms as well. I expect that it should work well. However, if not, I simply will not use that variation again and chalk it up to experience.

Breakfast was an Italian seasoned ground beef omelet w/onion, celery, and cheese. Lunch was a couple of deviled eggs, a couple of stalks of celery stuffed with a cream cheese and sour cream mixture w/roasted red pepper and marinated artochoke hearts. Dinner is a special New Years Eve dinner. Shrimp and Sliced avacado cocktail with my California Style Chipolte Cocktail Sauce, something that I call Fruits of the Sea Primavera (scallops, shrimp, and crab in a white wine and cheese sauce w/onion, mushrooms, broccoli, and artichoke hearts) served over Dreamfields linguini with a glass of Sauvigon Blanc. Dessert will be Baked Alaska w/ a low carb chocolate sauce.

Hello, Heather and Henry! I see you two have kept the light on here!

I'll be back posting now. The time has come and my resolution is to spend more time here....which may only be 5 minutes, but that is more time than I have been spending here!

I went Krogering to the tune of almost $300 and prepared the spouse and I for some healthy eating. DD has a box of Little Debbies hoarded in her room. That's it, though. The meals I will be making will be healthy and low carb. Anything else will have to be purchased and consumed outside of this house. Period.

Tune in tomorrow to see how many of my 5 I get in on my first official day back!

Can't wait to hear the great results from your 5 a day Maxibee. :jump: This year too I want to be even stricter on what comes in this house. Since I do most of the grocery shopping it shouldn't be a problem. Besides not buying junk will only save on my food budget as well as help the family and their energy levels. The kids enjoyed eating hard boiled eggs this morning. Good start for all of us here. Food shouldn't be associated with good times. I'm going to try to keep up good times associated with fun playing times like walks, the park...

Today will be peaches for my fruit servings and then for veggies my spinach salad. I'm simple sally but whatever works.

Welcome back Maxi. Breakfast was Maggie's cereal w/dried cranberries. Lunch was assorted appetizers of deviled eggs, celery stuffed with cream cheese, sour cream, roasted red peppers, and artichoke hearts, and some of my killer l/c crackers topped with salami and cheese while I watched the football games. Dinner was crab, shiritaki w/Welsh Rarebit cheese sauce, and snow peas and carrots in butter and sherry along with a couple of glasses of the champagne we did not stay up for last night.
